If your looking for a comfort dish,  you just found it.  This is easy and oh so good! This would be great to bring to a friend that might need a night off too!  Add a side salad and your dinner is done.

 

 

 

 

INGREDIENTS
1 box of chicken flavored Rice A Roni
1 can cream of chicken soup (can use low fat or fat free)
1 cup sour cream (I use low fat)
3-4 cups cooked leftover chicken or store bought rotisserie chicken
1 (6 ounce) can of french fried onions

DIRECTIONS
Preheat oven to 350 degrees.
Prepare Rice A Roni according to package directions.  Mix in soup,  sour cream and pieces of chicken to rice and mix well. Add rice mix into a lightly sprayed 9×13 baking dish. Sprinkle with french fried onions and bake uncovered for 30 minutes.

I don’t know about your house,  but at my house there always seems to be a bag of Dorito’s  hanging around so when I was looking for something easy to make Dorito salad was it. Everyone has their own way of making it,  but this is mine.

 

 

INGREDIENTS
Shredded lettuce
Diced cherry tomatoes
1/2 cup Monteray jack cheese, shredded
1/2 cup sharp cheddar cheese, shredded
1 1/2 pounds ground beef
1 package low sodium taco seasoning
1 can black beans, rinsed and drained
1 can of corn, drained
French dressing
Crushed Dorito’s

DIRECTIONS
In skillet, brown ground beef over medium heat. Drain liquid from the bottom of the pan and add the taco seasoning mix well and add corn and beans to warm through. remove from heat. Shred lettuce, dice tomatoes, grate cheese (or use shredded).

Time to build your salad.   Starting with the lettuce, add tomatoes, cheeses, ground beef, beans and corn.  Add French dressing and crushed Dorito’s.

If you have never had these Rolo candy treats you are going to love them! I first started making them a couple years ago when one of Robby’s teachers started raving about how good they are and he was right…they hit all the marks… sweet, salty and crunchy!  The hardest part of this is unwrapping all the candies (this is the time to put the kids to work!) but don’t worry I know you will love them and you can thank me later!

 

 

INGREDIENTS
1 (12 ounce) package Rolo candy
Pecan halves
Small pretzels

DIRECTIONS
Preheat your oven to 350 degrees. Line a baking sheet with tin foil and spray with non-stick cooking spray. Place pretzels on baking sheet, top each pretzel with one unwrapped Rolo candy. Bake in oven 3-4 minutes. Remove from oven and quickly place one pecan half on each Rolo pushing them down slightly so that the chocolate covers most of the pretzel. Cool in the refrigerator for about 20 minutes. This recipe can be found on the back of the Rolo candy package!

The second way to make candy treats is just as simple and just as tasty!

 

 

 

 

 

ROLO  STACKS

INGREDIENTS
1 (12 ounce) bag of Rolo Candy
Ritz crackers

DIRECTIONS
Preheat oven to 350 degrees.  Line baking sheet with tin foil and lightly spray with non stick spray. Place ritz crackers flat side up on the baking tray and top each cracker with one unwrapped Rolo candy. Place in oven and bake 3-4 minutes. Take out of oven and place another ritz cracker on the top of the Rolo candy. Slightly push the candy down making a candy like sandwich.
Cool in refrigerator for 10-15 minutes.

NOTE
Because I love my readers and I am dedicated to researching these recipes, I can tell you if you want to make just one or two, okay maybe JUST three of these Rolo  treats, they can be done in your microwave. Place the crackers and candy on a microwave plate , microwave about 15 seconds (depending on your microwave and how many candies you are doing) and follow the rest of the directions as written above.

I just LOVE Pinterest but I thought I might share a recipe fail with you.  I really liked the idea of a grilled strawberry shortcake recipe and looking at the recipe,  I also really liked the marinade that went on it.  BUT, what I did not like is how it fell apart! I love grilling almost everything and I think this could be a very good recipe, so I may work on this again.  IF you have had any luck with this type of recipe I would love to hear from you!

 

INGREDIENTS
1 store bought shortcake loaf or pound cake (I used pound cake)
1 package of strawberries washed
wooden skewers (soaked in water)

ORANGE MARINADE
1/2 teaspoon orange zest
1/2 cup fresh squeezed orange juice
2 Tablespoons brown sugar
1 tablespoon water
1/2 teaspoon vanilla extract
Small pinch of salt
Vanilla ice cream optional

DIRECTIONS
Spray grill with non stick spray. Preheat grill to medium heat.  Thread strawberries and cake on the skewers, alternating.
Mix marinade ingredients. Place skewers on grill brushing with the marinade and grill for 30-60 seconds per side.
Serve warm with vanilla ice cream.

The flavors were all there but not with the cake falling apart the way it did!

We LOVED this recipe so much I have made it twice just this week! Fast, easy and so delicious!

 

INGREDIENTS
1 stick of butter
1 lemon, sliced
1 small bag of frozen shrimp peeled and deveined (can use fresh)
1 Tablespoon dried Italian seasoning
Crusty bread

 

DIRECTIONS
Preheat oven to 350 degrees
Place stick of butter in a baking dish and put in the oven while it is preheating to melt the butter. When the oven is up to temperature add the sliced lemons to the melted butter. Add the shrimp on top of the lemons. Sprinkle with dried seasonings.  Bake 15 minutes and serve with sliced crusty bread.

NOTE

I made this recipe with frozen shrimp that were peeled , deveined and tails off as that is what I had on hand and the cooking time was exactly 15 minutes. Depending on the size of your shrimp will depend on your cooking time. I also used Ciabatta bread, that worked fantastic with the shrimp!
