I am a little excited about this recipe because I think it has endless possibilities! We love the flavor of my spicy baked egg rolls that I make. But there are times that I may not have the egg roll wrappers on hand or I just don’t have the time to roll them all. Lets face it we are all busy and some nights we are doing all we can do to just get dinner on the table! Mr. MCYM and I both agreed this would be great served over white rice. Robby had two full helpings, so I think this is a winner! I can’t wait to play with this a little more, I think the combinations are endless with this. If you don’t like pork, try shrimp, don’t like sweet and sour sauce, try a soy based sauce. I have so many ideas!!!!!!
INGREDIENTS
1 roll of HOT Jimmy Dean Sausage
1 package of coleslaw mix
salt
pepper
4 ounces of your favorite sweet and sour sauce or “duck” sauce

White rice (optional)
DIRECTIONS
In a LARGE sauté pan over medium high heat add the sausage and cook through while stirring and crumbling. When the sausage is cooked through add your desired amount of coleslaw mix and mix well with the sausage. Cook together for about 5-6 minutes or until the slaw mixture is wilted. Add salt and pepper to taste. mix and add the sweet and sour sauce and combine well. Cook for 1 more minute to heat the sauce through. Remove from heat, garnish with the scallions and serve over white rice if desired.
Enjoy,
This appetizer is so simple and so delicious! I know there are many people that say you should not combine seafood with cheese, well they have never tried this recipe! So GOOD! Robby was a little skeptical at first but all it took was one bite before he was reaching for another piece! I found this recipe over at www.jamhands.com but felt that the measurements were a little skimpy so I doubled the recipe for the topping and I am thrilled I did! The recipe below are MY measurements.
INGREDIENTS
1 pound cooked shrimp
2 tablespoons of butter
2 teaspoons of Old Bay seasoning
salt to taste
pepper to taste
1 large ciabatta loaf, sliced in half
1 cup of mayonnaise
1/2 cup fresh dill
1/2 cup fresh chives
3 cloves of garlic
2 cups cheddar jack cheese
DIRECTIONS
Preheat oven to 350 degrees. Remove the tails from the shrimp and set aside. In a large sauté pan melt the butter over medium heat, add the shrimp and the old bay seasoning. Cook for just a couple minutes making sure the shrimp is well coated with the seasoning. Remove from heat and let cool. When cool chop the shrimp into pieces. Place the shrimp into a medium bowl with mayo, garlic, chives, dill and cheese. Season with salt and pepper to taste. Mix gently until well combined. Place the ciabatta bread on a baking sheet with the cut sides facing up. Spread you shrimp mixture onto both sides of the bread and bake for about 15 minutes or until the cheese is melted. Remove from oven, slice into sticks and serve warm.

This is one of Mr. MCYM favorite dinners. I have made the recipe a couple times but then lost the recipe! I FINALLY came across the recipe and made Jim a very happy man! This recipe comes from www.damndelicious.com . Although this recipe is called Korean beef in my house , Jim and Robby both call it yakasoba! It does have some similarities, I guess. I served this with rice but Jim also likes it served with pasta.
INGREDIENTS
1/3 cup packed brown sugar
1/4 cup low sodium soy sauce
1 tablespoon sesame oil
1/2 teaspoon crushed red pepper
1 tablespoon vegetable oil
3 cloves of minced garlic
1 pound ground beef
2 scallions sliced
Rice or pasta
DIRECTIONS
In a small bowl whisk together brown sugar, soy sauce, sesame oil and red pepper flakes. Heat vegetable oil in a large skillet over medium high heat, add garlic and continue cooking until fragrant (about 1 minute). Add ground beef and cook until browned, crumbling the beef as it cooks through. Drain fat and stir in the soy sauce mixture and scallions. Stir until well combined and heated through.
Serve with rice or pasta.

This is not your average ham and cheese…this is ham and cheese on steroids! The inspiration from this dish came from www.pinchofyum.com . This can be done using slider rolls or regular sandwich size rolls. If you are making them for a party and want to do a little bit before hand you can caramelize the onions and make the bacon the day before. You can also assemble the sandwiches ahead of time storing them in the fridge until you are ready to bake. I also think that you could add sautéed mushrooms to this and it would be terrific BUT because I dislike mushrooms you will not see them here! Just sayin! Please feel free to try it and let me know what you think!
I made six sandwiches with these measurements
INGREDIENTS
12 slices of honey ham
6 slices of Swiss cheese
6 slices of thick cut apple smoked bacon (cooked until crisp)
1 large onion, sliced and caramelized
1 tablespoon of butter
1 tablespoon of brown sugar
4 tablespoons of butter at room temperature
1 tablespoon dijon mustard
DIRECTIONS
Preheat oven to 350 degrees. Caramelize onion by sautéing in a pan with 1 tablespoon of butter. When the onion starts to brown, add 1 tablespoon of brown sugar and continue sautéing until the onions are golden brown.
For the bacon, I bake the bacon in the oven at 300 degrees until crisp, turning as it cooks. (depending on the thickness of the bacon it takes my bacon about 20 minutes)
Mix the 4 tablespoons of room temperature butter with the dijon mustard, set aside.
To assemble the sandwich place the rolls on a baking sheet, spread the butter dijon mixture on the top side of the bun.
Layer the ham, onion, bacon and cheese on the bottom of the roll. Close the roll and bake for 10 minutes, then cover with foil and bake for an additional 5 to 10 minutes until the cheese is melted through. Remove from oven.

Well, it is that time of year again, all the kids are going back to school. So with that being said this is not really a recipe. BUT this is one of my favorite things to bring into my kid’s classrooms, or for an office party or any gathering or holiday party! This is a grab and go on the run dish. I just love it!
This dish comes straight from your local Panera store! Are you wondering what I am talking about yet? Well, here is the trick, Go into your Panera store and choose your favorite bagels and favorite cream cheese flavor and ask them to slice the bagels through their bread slicer! I know! This is just the best tip out there! You have thinly sliced bagels slices to lay out on a platter and serve with cream cheese! So when your kids come home asking to bring something to school for their class and your short on time, this is it!
Enjoy,
