I love one pan dishes, so simple and this is great for a weeknight dinner but fancy enough for company too! I let my market pick the vegetables for me and I highly recommend you do too! All the great vegetables are coming out in our stores and farmer’s markets. The citrus butter on this dish goes a long way, such a great pop of flavor on the salmon and vegetables. I cut my zucchini in about 1/4 to 1/2 inch rounds. Try to cut the veggies all in similar size so they all cook the same.

INGREDIENTS
4 salmon fillets
1 bunch of asparagus, cut into one inch pieces and the ends trimmed off
1 bell pepper, any color, sliced
1 red onion, sliced
6 Tablespoons butter, melted
1 Tablespoon fresh squeezed grapefruit juice
Zest of one lime
Salt
Pepper

DIRECTIONS
Preheat oven to 400 degrees.  Mix the melted butter with the grapefruit juice and lime zest. Set aside.  Place the salmon and vegetables on the sheet pan, sprinkle with salt and pepper. Drizzle all of the melted butter mixture over salmon and vegetables. Cover with tin foil and bake for 25 minutes. Remove from oven and serve warm.

I love easy and delicious and this pie is just that. Jim loves a good blueberry dessert and this fit the bill! Both Jim and Robby loved this pie so much, so it did not last for 24 hours! I loved how simple it was to make. This would make a terrific dessert to bring to any of your summer gatherings or for the Fourth of July! I will be making this over and over again!

 

INGREDIENTS
1 pre-made graham cracker crust
8 ounces of cream cheese, softened
1/4 cup powdered sugar
1 Tablespoon milk
1 teaspoon vanilla extract
3 cups fresh blueberries
Juice and zest of one lemon
1/2 cup of your favorite blueberry jam
Cool Whip for topping

DIRECTIONS
In a medium bowl whip the softened cream cheese, powdered sugar, milk, and vanilla until light and fluffy.  Spread into the bottom of the pre-made graham cracker crust.  Combine the berries with the lemon zest and lemon juice, add the 1/2 cup of blueberry jam, mixing well. Pour on top of the cream cheese mixture, spreading evenly over the cream cheese layer. Chill until ready to serve.  Top slices with Cool Whip.

These Taste of Home peanut butter filled brownies became a fast favorite of many of the Volunteer Field Editors. I made them for my family and I can see why they are loved by so many! These are easy to make and if you love peanut butter and chocolate you will love these.

Makes 1 dozen.

INGREDIENTS
1 package fudge brownie mix  (8 inch square pan size)
1/2 cup mini semi-sweet chocolate chips
1/3 cup creamy peanut butter
3 Tablespoons cream cheese, softened
1 large egg
1/4 cup sugar
Confectioners sugar for dusting, optional

DIRECTIONS
Preheat oven to 350 degrees. Prepare brownie mix according to package directions and stir in mini chocolate chips.
For filling:  In a small bowl beat peanut butter, cream cheese, egg, and sugar until smooth.
Fill paper lined cups one third of the way full with the brownie batter. Drop filling by teaspoon into the center of each cupcake. Cover the peanut butter filling with remaining batter.
Bake 15-20 minutes or until toothpick inserted into the brownie portion comes out clean. Cool ten minutes before removing from the pan to a wire rack to cool completely. Dust tops with confectioners sugar if desired.  Store in the refrigerator.

As you know I have made many, many Taste of Home recipes but this is one of my all time favorite recipes for so many reasons. I don’t consider myself a baker and most definitely not a bread baker. Aren’t there bread machines for such things? Well, when I read this recipe I thought this was too good to be true. There was no way the bread is going to taste so good with such little work. Well, boy was I wrong! The bread was amazing and just as easy as the recipe says! But another thing I love about this recipe is that you can add herbs and spices to the bread adding different flavors. One of the volunteer field editors added course salt and rosemary to the dough! How good does that sound? I should also tell you how good this makes your house smell while it bakes. So easy and so delicious…I will be making this over and over!

NOTE– A number of people made this in various pans, loaf pan, round pan even a pie plate.  I needed to cover my bread with foil after the first 20 minutes of baking.

INGREDIENTS
1 teaspoon active dry yeast
1 1/2 cups warm water (110- 115 degrees)
2 3/4 cups all purpose flour
2 Tablespoons sugar
2 Tablespoons olive oil
1 1/2 teaspoons salt

DIRECTIONS
In a large bowl dissolve yeast in warm water. Let sit for just a couple minutes.  Stir in remaining ingredients to form a wet dough. Cover and let rest in warm place until doubled, about 1 hour.
Stir the dough down, transfer to a grease 2 1/2 quart baking dish. Cover and let rise in a warm place until almost doubled, about 1 more hour.  Preheat oven to 425 degrees.  Bake 20 minutes, reduce oven temperature to 350 degrees. Check to be sure the bread is not browning too much. If so, place tin foil over the top. Bake another 20 minutes.  Remove bread from oven and remove from pan to cool on a wire rack.  Serve warm or at room temperature.

I came up with this quick and easy dish after Easter as I had so much left over ham and how many ham sandwiches can my family possibly eat. I simply took ingredients I had on hand and put this together. My family loved this after eating so much leftover ham.  This disappeared quickly. You can do this just as easy with deli ham slices too!

NOTE- you will have leftover sauce, but this cheesy sauce is delicious on anything !

INGREDIENTS
1 frozen package of 5 cheese garlic bread (I used Pepperidge Farm)
Leftover ham slices, about 1/2 pound
2 Tablespoons butter
2 Tablespoons flour
1 1/2 cups whole milk
Pinch of salt
Pinch of pepper
Pinch of nutmeg
1/2 cup Gruyere cheese
1/2 cup shredded Parmesan cheese

DIRECTIONS
Preheat the oven to 400 degrees.  Cover a sheet pan with tin foil. Place your frozen garlic bread on the baking sheet cheese side up and bake for ten minutes. While the bread is baking make the sauce. In a small saucepan melt the butter, add the flour and whisk for just a couple minutes, add the milk whisking to get out any lumps. Add the cheeses and continue whisking until smooth. Add salt, pepper, and nutmeg. Continue to cook until sauce thickens.
After the bread had baked for the first ten minutes, add the sliced ham on to the bread and drizzle with the thickened sauce. Turn the oven to broil, leaving the oven door cracked slightly and broil for 2 more minutes. Remove from oven, slice and serve warm.
