If you follow me you know how much I love the show The Chew. Well, this recipe comes from Clinton Kelly. He made this recipe on the show and everyone raved about it. This is not a super sweet recipe but has notes of sweetness with the dates, but the butter really makes this bread. Don’t skip the butter as it truly brings the bread to an amazing place! If you are looking for something a little more sweet you can take my husband’s suggestion and put some mini chocolate chips in there!!
INGREDIENTS
2 cups whole wheat flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 Tablespoon ground cinnamon
1 1/2 teaspoons ground cloves
1 can unsweetened pumpkin purée (15 ounces)
1 cup sour cream
1 stick unsalted butter, melted
1 teaspoon vanilla extract
4 large eggs
1/2 cup dark brown sugar
1 cup of walnuts, chopped
1 cup of dates, pitted and chopped
1/2 cup mini chocolate chips (optional)
FOR THE BUTTER
1 stick unsalted butter, room temperature
Zest of one orange
2 Tablespoons of honey
1/2 teaspoon salt
DIRECTIONS
Preheat oven to 350 degrees. Butter or spray two loaf pans with non stock spray. In a large bowl add the flour, baking soda, baking powder, salt, cinnamon and cloves. Whisk to combine. In a separate large bowl add the pumpkin, sour cream, sugar, butter, vanilla and eggs. Whisk to combine. Add the dry ingredients into the wet ingredients a little at a time stirring to combine until all of the dry ingredients are well combined. Fold in the walnuts, dates and mini chips if using. Pour batter into prepared loaf pans. Bake for 1 hour and 10 minutes to 1 hour and 20 minutes or until cooked through checking with a toothpick inserted in the center of the loaf, If it comes out clean, it is ready. When cooked through remove from oven letting them rest on a baking rack for 15 minutes to cool completely before slicing.
To make the orange honey butter, mix all of the ingredients together until well combined. Serve with bread.
Enjoy!
Chocolate Beer Bread! Move over banana bread, there is a new bread in town and it is here to stay!! This is so good, lots of chocolate flavor and chocolate chips and no one could ever guess it is made with beer! Crazy right? Well this recipe comes from my dear friend, Kathy, who is also someone who enjoys cooking and baking really good food! I work with Kathy at the high school and when we have a few moments together we find ourselves talking about our latest and greatest recipes. Kathy is a french teacher who loves to teach, travel, cook and spend time with good friends and family, I hope you enjoy Kathy’s recipe as much as I do!
INGREDIENTS
2 cups all purpose flour
1/2 teaspoon salt
2/3 cup cocoa powder
1 cup white sugar
1 Tablespoon baking powder
1 Tablespoon corn starch
3/4 cup chocolate chips
10 ounces chocolate beer (I used Decadent dark chocolate ale, but if you cannot find chocolate beer you can also use stout, but this will change the taste of the bread)
2 Tablespoons vegetable oil
2 Tablespoons melted butter
DIRECTIONS
Preheat oven to 350 degrees. Add flour, salt, cocoa powder, sugar, baking powder, cornstarch and chocolate chips in a large bowl and stir to combine. Add the beer and melted butter and stir until combined. This will be a thick batter. Pour into a loaf pan that has been sprayed with non-stick baking spray. Bake for 45 minutes or until a tooth pick inserted in the center comes out clean. Cool before slicing.
THANK YOU KATHY!
Recipe Note- after tasting this amazing chocolate beer I have decided this would be a great beverage to make a root beer float! Swap the root beer for the chocolate beer! Yup!! Just might have to try that!!
Enjoy!
It was another chilly weekend when I made this bread. I was not sure what I wanted to make but with all the cold air we have been having, anything that sounded like a little bit of summer sounded like a good thing to make! I found this recipe on Pinterest. I did make a couple slight changes and would certainly make this recipe again! Lots of flavors in this bread!!
INGREDIENTS
2/3 cup shortening or butter
1 1/4 cup sugar
4 eggs
3 1/2 cups flour
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed banana (about 4 medium)
2 (8 ounce) cans crushed pineapple, drained
1 cup semi-sweet chocolate chips
1 ( 10 ounce) jar red maraschino cherries, drained and chopped
1 cup chopped walnuts
DIRECTIONS
Preheat oven to 350 degree’s. In a large bowl cream shortening (or butter) and sugar until light and fluffy. Add eggs one at a time beating well after adding each one. Combine flour, baking powder, baking soda and salt. Give this mixture a little whisk to get any lumps out. Add this mixture a little bit at a time to your creamed butter/sugar mixture alternating adding the mashed banana’s and pineapple. When you have that well combined, stir in the chocolate chips, cherries and walnuts. Pour into two well greased 9 x 5 loaf pans and bake for 60 -65 minutes or until a toothpick inserted into the center comes out clean. Cool for ten minutes before removing the loaves to a cooling rack.
Enjoy,
If you follow my blog even a little bit you know how much I love watching Food Network and one of my favorite shows is the Pioneer Woman! I have made many of her recipes and I have never been disappointed as they are all so tasty! I made this recipe for the first time about four years ago and it is still a go to recipe for a special occasion or party! Mr. MCYM is not a fan of olive’s so he is not thrilled, but everyone else in the family and many of our relatives and guests just love this recipe. I’m sure you will all enjoy it as well. I have also made the cheese mixture the night before and kept it in the fridge until I was ready to use it thus saving some time on a busy day!
INGREDIENTS
6 ounce can of black olives, drained
6 ounce jar of pimento stuffed green olives, drained
2 scallions
1 stick of butter, room temperature
1/2 cup of mayonnaise
12 ounces shredded Monterey Jack cheese
1 loaf crusty french bread, sliced lengthwise
DIRECTIONS
Preheat oven to 325 degrees. Roughly chop both black olives and green olives. Set aside and slice the scallions into thin pieces. Combine the butter, mayonnaise, cheese, olives, and scallions in a mixing bowl and stir well until well combined. Spread the mixture onto the french bread. Bake until the cheese is melted and turning just slightly brown about 20-25 minutes. Remove from oven, slice and serve warm!
Enjoy,
I made this bread with a pasta dish last week and it was an instant favorite with Mr. MCYM! We all enjoyed it but Jim LOVED it! It is a little different from your average garlic bread as it is made with Gorgonzola and Parmesan cheese! I will be keeping this in my menu rotations for sure!
INGREDIENTS
1/4 cup butter, softened
1/2 cup Gorgonzola
1 garlic clove, minced
1/2 cup parsley, chopped
1/4 tsp. salt
pepper
1 loaf of italian bread
Parmesan cheese
DIRECTIONS
Preheat broiler. Cream the butter with the Gorgonzola cheese. Add your minced garlic to the mixture along with the chopped parsley, salt and pepper. Slice the bread lengthwise, place the bread on a baking sheet and spread the mixture along each half. Sprinkle with Parmesan cheese. Place the baking sheet under the broiler keeping the oven door open slightly and broil until cheese is melted and bubbly being careful not to burn. Cut into slices and serve warm.
Enjoy,
