Robby has been loving chicken and rice lately, Jim and I are looking for something a little different and this dish hit the spot for ALL of us! After one bite Jim declared he could eat this everyday. That says a lot. I made this in a 9×9 dish but next time will double the recipe and make it in a 9×13 dish. I will also be adding in a can of black beans next time. Corn would also be a terrific addition but sadly Robby cannot have ANY corn what so ever so I’ll add that ingredient as an option for you! I used a spicy mango habanero salsa but any salsa will work, if you use a salsa that is not spicy but you want to add a kick feel free to add some sliced fresh jalapeño rings to the meat and onion mixture.

INGREDIENTS

1 pound ground beef (can use ground Turkey or ground Chicken)
1/2 cup diced onion
1 packet taco seasoning (I used gluten free)
1/2 cup of your favorite salsa
2 cups cooked white rice
1-2 cups Mexican cheese (how ever much you like)
1/4 cup water
1 can of black beans -optional
1 can of drained corn-optional
1 sliced jalapeño-optional

DIRECTIONS

Pre heat oven to 350 degrees.
Brown ground beef in a pan breaking up the beef as it cooks. add the chopped onion and jalapeño if using. When cooked through drain the grease and add the taco seasoning and water.
In a large bowl add the cooked rice, salsa, half of the cheese , corn and black beans if you are adding them. Mix well. When the ground beef is cooked through add the ground beef to the rice mixture and mix again.
Add the mixture into a greased 9×9 baking dish, top with the remaining cheese and bake for 15 minutes.
Remove from the oven and serve warm with a salad!

Happy New Year! I hope everyone had a wonderful Holiday. The first recipe I am giving you for the New year became a family favorite Very quickly, so much so that both Jim and Robby have requested it again for next week! I’m not going to argue with them as I loved them as much as they did! The meatballs balls are light and the sauce is a party in your mouth. I was originally making these as an appetizer but then decided to serve them over rice as that has been one of Robbys favorite things lately. I don’t mind making rice anymore as I just bought a new little Black and Decker rice machine that I absolutely love. I bought it on Amazon for under $20.00 and I have gotten my money back on it already. If you serve them as an appetizer or main course I think your family will be just as happy as mine.

NOTE- I made this a second time using ground Turkey and the results are delicious! We loved this so much the first time so this time I doubled the meatball portion of the recipe BUT kept the sauce recipe as is. The sauce recipe makes plenty of sauce even when doubling the meatballs!

INGREDIENTS

FOR THE MEATBALLS

1 pound lean ground beef
1/2 rolled oats , I used Bob’s red mill Gluten free, any will work
1 egg, slightly beaten
1/4 cup Vidalia onion, chopped
Pinch of salt
Pinch of pepper
Dash of Worcestershire sauce

FOR THE SAUCE

1 cup packed brown sugar
2 teaspoons yellow mustard
1/4 cup ketchup
1/4 barbecue sauce-I use a sweet BBQ sauce
2 teaspoons Worcestershire sauce
1/2 cup white vinegar

DIRECTIONS

Pre heat your oven to 350 degrees.
Mix the ground beef,oats, onions, egg, salt, pepper and Worcestershire sauce. Mix until well combined but don’t over work the beef.

Using a small scoop or 2 Tablespoons at time roll the meat mixture into balls and place in a baking dish. Roll until all of the meat mixture has been used.

In a medium size bowl mix together all of the sauce ingredients until well combined. Pour over the meatballs and bake uncovered. Depending on the size of your meatballs cooking times can vary. My meatballs took 30 minutes. (I made about 20 meatballs) remove from oven when cooked through and serve as an appetizer or over cooked rice.

This is another recipe that I started making last summer. I was looking for something to make using ground beef. Gee, I marinate almost everything, why not a burger? This delicious creation was born! I make the marinade in the morning and let the burgers marinate all day until we are ready to grill. Dinner comes together in no time. I have already made these several more times this year.

INGREDIENTS

  • 1 pound ground beef
  • pinch of salt
  • pinch of pepper
  • 2 Tablespoons brown sugar
  • 1 Tablespoon olive oil
  • 2 Tablespoons balsamic vinegar
  • 1 teaspoon of steak sauce such as A1
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon Worcester sauce
  • 1 teaspoon low sodium soy sauce
  • 1 clove 9f garlic, diced
  • 1/2 teaspoon red pepper flakes
  • 4 Hamburger buns

Add all of your favorite burger toppings.

Cheese, lettuce, tomato or onion

DIRECTIONS

Place the ground beef in a bowl and season with salt and pepper. Mix to combine and divide the meat into four equal patties and place in a baking dish.

Mix the remaining ingredients (not the buns) together in a small bowl and mix to combine. Pour the marinade over the burgers, cover with plastic wrap, and let sit in the fridge for at least an hour.

Preheat your grill to medium heat, remove burgers from the fridge. Place the burgers on the grill and cook to the desired doneness flipping the burger halfway through cooking. Grill the buns if desired.

Remove from the grill and serve with your favorite toppings.

This BBQ beef dish has been one of my family’s absolute favorite recipes lately. With the cold weather here this dish is perfect. Easy to make and my house always smells delicious while it’s cooking. I serve this over garlic mashed potatoes but you could easily serve in tacos too. I use a gluten-free maple BBQ sauce but you can use your favorite store-bought or homemade sauce.

INGREDIENTS

  • 2-3 pound roast
  • 4 Tablespoons olive oil
  • pinch of salt
  • pinch of pepper
  • 28 ounce of barbecue sauce

DIRECTIONS

Preheat oven to 325 degrees. Drizzle 1 Tablespoon of the olive oil on the roast. Sprinkle with salt and pepper and rub into the roast. Do this on all sides of the roast.

Heat 2 Tablespoons of oil in a Dutch oven on medium-high heat. Once the oil is hot carefully put the seasoned roast in the pan and sear it for about 2 minutes until browned. Carefully turn the roast over and sear the second side. Using tong hold the roast on the edges and sear all of the edges.

Pour the bottle of BBQ sauce into the pan lifting up the roast so the sauce can get underneath the meat. Put the lid on the Dutch oven and cook for 2 to 2 1/2 hours or until cooked through. Let the roast rest and shred using 2 forks.

As you know if you follow along even a little bit is that my family loves a good burger and sometimes it’s hard to change them up a little bit but if you are looking for something a different this just might be it! This was a great change of pace for us and dinner we all enjoyed.

INGREDIENTS

  • 1 cup finely crushed corn chips
  • 1 envelope taco seasoning
  • 1 Tablespoon dried minced onion
  • 1 large egg, lightly beaten
  • 1 1/2 pounds ground beef
  • 6 slices of cheddar cheese
  • sandwich buns
  • lettuce leaves
  • tomato slices
  • salsa

DIRECTIONS

In a large bowl, combine the corn chips, taco seasoning, onion, and egg. Crumble the beef over the mixture and mix well. Shape into six patties. Grill covered over medium heat or broil four inches from the heat for 7 – 8 minutes on each side or until thermometer reads 160 degrees and juices run clear. Top each burger with a cheese slice, heat just until the cheese begins to melt. Serve on buns with lettuce, tomato, and salsa if desired.
