No Bake Energy Bites

This post is dedicated to my beautiful niece, Sarah.  Sarah is a 21 year old student athlete. Oh and I should say also a vegetarian! Sarah is a fantastic runner and an all around great athlete and she is the one that introduced me to PB2!  She uses this in almost everything, it is a great way to add protein without all the fat! On most mornings I get up and go for a walk, BUT I don’t like to eat much before I go.  Sometimes you just need a little something to get moving and these peanut butter energy bites are just the thing. These are also great for a post workout as well. These are easily adaptable to ANY fruit, nut or grain you like!

INGREDIENTS
6 Tablespoons PB2 (prepared with 3-4 Tablespoons of water)
2/3 cup dry oatmeal (I used old-fashioned oats)
1/3 cup mini chocolate chips
1/3 cup ground flax seed
1/3 cup coconut flakes
1/4 cup honey
1 tsp. vanilla

DIRECTIONS
in a medium bowl, mix PB2 with water blending well. Add the remaining ingredients to the bowl mixing thoroughly. Chill in the refrigerator for at least 30 minutes. Once chilled roll the balls about 1 inch in diameter. I found that I had to squeeze the mixture a little bit in my hand and then roll into a ball. Store in an airtight container in the refrigerator.
