This dish was inspired by our neighbors, they had a celebration for one of their kids and we were lucky enough to be invited. I’m so glad we were as the food was AMAZING! It was a Mexican feast that was cooked by both of their parents. All I can say is I am still dreaming of those taco’s! Not only did we LOVE the taco’s we also really enjoyed their guacamole, it was so bright, so fresh and incredibly creamy! Although mine is creamy it was not nearly as creamy as we had at the neighbors home but my blender In The motorhome is just not the best. This was so easy and a recipe I will make many more times.
Note- ripe avocado’s are best for this recipe.
INGREDIENTS
3 Ripe avocado’s
3 tomatillo’s
1/2 jalapeño pepper, more if desired
1 clove of garlic
4 Tablespoons sour cream or Mexican cream
6 Tablespoons water
Pinch of salt
Tortilla chips for serving
DIRECTIONS
This recipe is made right in the blender!
Pit the avocado’s and remove the flesh and add into the blender. Peel and wash the tomatillos, slice them in half and add to the blender.
Remove the stem from the jalapeño and slice in half lengthwise, add desired amount of jalapeño into the blender. I used 1/2 of a jalapeño for a slight kick.
Peel the garlic and add into the blender
Squeeze the lime into the blender.
Add a pinch of salt.
Blend ingredients until smooth. If it is too thick add the water into the blender 2 Tablespoons at a time.
Blend until smooth and creamy.
Chill in the fridge for at least and hour to le the flavors meld.

I first saw Korean sticky potatoes on one of our local restaurants menu’s but I had never heard of them. I took to Pinterest and sure enough there it was a number of recipes for Korean Sticky Potatoes! When I found the recipe I had all of the ingredients on hand so I got right in the kitchen! These are sweet and salty all at once. Jim and I both liked them but Jim thought he would like some sliced cooked sausage links added in. I have decided I will try it again with maple flavored sausage links diced in but either way these are very good, definitely not your average breakfast potatoes!
INGREDIENTS
1 1/2 pounds baby potatoes diced into quarters or any potato diced into the same size.
2 Tablespoons olive oil
1/2 cup of water
2 1/2 Tablespoons Tamari- I used light tamari for less salt
2 Tablespoons corn syrup
1 1/2 Tablespoons white granulated sugar
1 Tablespoon ketchup
1 Tablespoon minced garlic
1 teaspoon roasted sesame seeds-optional. I left off due to a dietary restriction
DIRECTIONS
Heat 2 Tablespoons of olive oil in a large pan and fry the diced potatoes, stirring occasionally on medium high heat for 5-7 minutes or until the potatoes start to get soft. Then add the water, tamari, corn syrup, sugar, ketchup and garlic. Simmer for another 6-8 minutes until the potatoes and fork tender. The sauce will thicken and coat the potatoes making them nice and sticky.
Sprinkle with sesame seeds if desired.
Serve warm.

We have had our bread machine for a very long time and it never disappoints. Jim is the bread maker in the family as he makes our pizza dough, cinnamon rolls, apple bread and other recipes. He recently made these breadsticks and they were so good! Think Olive Garden type breadsticks warm out of the oven! We had them with a small side dish of roasted garlic Alfredo sauce. So good. Comfort on a plate!
INGREDIENTS
1 cup plus 2 Tablespoons of water
3 Tablespoon butter, softened
3 cups “00” flour OR all purpose flour
2 Tablespoons sugar
1 1/2 teaspoons salt
2 1/4 teaspoons regular active dry yeast OR 2 1/4 teaspoons bread machine yeast or quick acting active dry yeast
FOR THE TOP
1 Tablespoon water
1 egg white
Sprinkle of sea salt
Alfredo or marinara sauce for serving if desired.
DIRECTIONS
Place all of the dough ingredients in the bread pan in the order listed. Select white dough cycle.
Grease cookie sheets. Divide dough into ten pieces, roll each piece into a rope. Place the rolled dough on the cookies sheets 1 inch apart. Cover and let rise in a warm spot for 20-25 minutes or until puffy.
Heat oven to 350 degrees. Beat 1 Tablespoon of water with the egg white and brush over the top of the dough.
Sprinkle with salt and bake for 15-20 minutes of until breadsticks are golden brown and cooked through.
Serve warm with a side of garlic Alfredo sauce or marinara sauce if desired.

The first time I made this is was a huge success, everyone loved this breakfast side dish. I have made it a few times now and Jim’s favorite way to have it is with 2 sunny side eggs on top. He also thinks I should add more bacon, is there ever to much bacon? Jim doesn’t think so! This would be an easy recipe to double if needed. This gave us four portions.
INGREDIENTS
20 ounce bag of seasoned diced potatoes, I used simply potatoes. (They are not frozen, my grocery store has them near the butter)
1 teaspoon minced garlic
4 cooked slices of bacon, crumbled
2 1/2 Tablespoons of honey
DIRECTIONS
Cook the potatoes according to the package directions. Just before the potatoes are done add the garlic, crumbled cooked bacon and honey. Mix well coating everything with the honey. Cook for an additional minute or two and remove from heat. Serve warm.

These roasted Asian spicy beans were such a great compliment to the Chinese Car Siu recipe, I roasted them in my cast iron pan right on the grill. I have baking instructions for you as well! This dinner came together so easy, I put Jim in charge of the grill and I made the fried rice on the stove top but I could have easily done the rice on the grill as well!
This picture is when we first put it on the grill as it cooks the beans will get lightly charred.
INGREDIENTS
1 pound fresh green beans, trimmed
1 Tablespoon sesame oil
Pinch of salt
Pinch of pepper
3 garlic cloves minced
1/4-1/2 teaspoon of red pepper flakes. We like it spicy so I used 1/2 teaspoon.
1 Tablespoon Tamari
2 teaspoons brown sugar
1/4 teaspoon ginger
Directions
In a medium bowl toss together all of the ingredients and mix well.
IF BAKING- pre heat oven to 425 degrees . Line a baking sheet with foil, spray with non stick spray. Layer the green beans in a single layer on your baking sheet and bake for 8-12 minutes or until the beans are tender.
FOR GRILLING-Add the green beans to a cast iron skillet and grill u see the beans are tender, mine took about 15 -20 minutes. This will depend on how hot your fire is.
When tender remove from oven or grill and serve warm.
