This is another great side dish! Lots of herbs and cheese! This recipe comes from Taste Of Home Magazine. I really like goat cheese so I was drawn to this recipe. If you don’t like goat cheese you can certainly leave it off as there is plenty of Romano cheese and herbs! I have already made this twice and look forward to making it again sooner than later!

INGREDIENTS
1/2 cup of butter, softened
1/4 cup grated Romano cheese
2 Tablespoons minced fresh basil or 2 teaspoons dried basil
1 Tablespoon fresh minced parsley
3 garlic cloves, minced
1 French baguette
4 ounces crumbled goat cheese

DIRECTIONS
Preheat oven to 425 degrees.  In a small bowl mix the butter, Romano cheese, basil,parsley and garlic, mix until well blended.  Cut the French baquette crosswise in half.  Spread the cut sides of the baguette with the butter mixture and place on a Un-greased baking sheet.  Bake uncovered for 7-9 minutes until lightly toasted. Sprinkle with goat cheese and bake 1/2 minutes longer until cheese is softened. Cut into slices and serve warm.

I love a side dish that can stand on it’s own. This side dish does just that and it’s really simple.  We enjoyed this side dish as it was a new twist on onions.  You can certainly change up the cheeses to your family’s taste!

INGREDIENTS
2-3 Vidalia onions ( or any sweet onion)
1/2 stick unsalted butter
Pinch of garlic salt
Pepper to taste
1 cup sharp cheddar cheese, grated
1 cup mozzarella cheese, grated
1/2 cup Parmesan cheese, grated

DIRECTIONS
Spray a 9 x 13 baking dish with non-stick spray.  Pre-heat oven to 350 degrees. Slice onions into 1/4 – 1/2 inch rings and separate the rings. Lay rings in your baking dish, add salt, pepper, cut butter into pats and place on top of the onion rings. Add the cheddar and mozzarella cheese covering the onions evenly.   Top with Parmesan cheese. Bake uncovered for 30 minutes or until bubbly and cheese is melted and slightly browned. Remove from oven and serve warm.

This is a simple, delicious side dish that was gone almost as fast as I put it on the table. This is made on the stovetop and would be a great compliment to any dinner time. I used the mixed colored potatoes and just tried to cut them into even sizes so they cook for the same amount of time. You can certainly use all little red potatoes, but I just could not resist all of the beautiful colored potatoes my store had !

INGREDIENTS
6 red potatoes, cubed
1/2 cup water
1 1/2 Tablespoons butter
1 1/2 Tablespoons brown sugar
Garlic salt to taste
Pepper to taste

DIRECTIONS
Bring potatoes, water, butter and brown sugar to a boil in a pan over medium high heat. Turn the heat  to low and simmer for about five minutes. Turn the heat back to high and cook until all of the water has evaporated and potatoes are tender. About another 10-12 minutes depending on the size of your potatoes. Remove from heat and add garlic salt and pepper to taste. Serve warm.

imageI’m always looking for a quick simple side dish and this one was just that, not to mention really good. But you know me I love any roasted vegetables and this is no different. I ate this as a side dish but Jim and a friend of ours had this on top of my grilled Southwest Burgers and they loved it that way. You can have this any way you want and I know you will like the fresh flavor as much as we did!!

INGREDIENTS
1 pound cherry tomatoes, halved
2 garlic cloves, minced
1 Tablespoon extra virgin olive oil
1/2 cup Panko crumbs
2 Tablespoons melted butter
2 Tablespoons fresh basil, chopped

DIRECTIONS
Preheat the broiler leaving the oven door open slightly. Combine the tomatoes, garlic and olive oil in an 8 inch baking dish. Season with salt and pepper. Broil stirring occasionally until the tomatoes are softened…about ten minutes. Combine the panko and melted butter, sprinkle over the tomatoes and broil for an additional minute, add basil to the top and serve warm.

Spring has arrived and so are all of the fresh vegetables! Vegetables may not be my most favorite thing to eat but when they are roasted and have some Parmesan cheese they fall right into my favorite category! These may not be your crispy fried green beans but they are very tasty even your kids will be munching on these! Jim and I both found ourselves eating these right from the pan as they came out of the oven!

INGREDIENTS
2 Tablespoons extra virgin olive oil
2 teaspoons minced Garlic
1 egg, beaten
1/2 teaspoon garlic salt
12 ounces fresh green beans
1/2 cup grated Parmesean Cheese

DIRECTIONS
Preheat oven to 425 degrees.  In a large bowl whisk the oil, garlic, egg and salt together. Toss the green beans in and mix well coating all of the beans.  Sprinkle the green beans with the cheese and gently toss making sure you have a nice coating of cheese. Place beans on a greased baking sheet and bake for 12 minutes.  Stir and turn the oven to broil and broil for about 5 minutes. Stir occasionally and let the beans turn slightly brown and the cheese lightly crisp!
Remove from oven and serve warm.
