I have really been enjoying the one pot dishes lately and this recipe is no exception. This comes together easily after a long day at work!  IT was also very well received by everyone who ate it that night!

 

 

 

 

 

INGREDIENTS
4 slices of bacon , diced
1 boneless skinless chicken breast, cut into bite size pieces
2 cloves of garlic , minced
1 onion diced
2 cups chicken broth
1 (14.5 ounce) can diced tomatoes
1/2 cup milk (I used 1%)
1/4 teaspoon red pepper flakes
3 cups rotini pasta
1/4 cup BBQ sauce (use your favorite)
1 cup shredded cheddar cheese
salt
pepper

DIRECTIONS
Heat a large stockpot over medium high heat. Add bacon and cook until crispy. (6-7 minutes). Stir in your diced chicken and cooked until golden brown. Add garlic and onion continue cooking until onions are translucent. Stir in chicken broth, tomatoes, milk, red pepper flakes, pasta and salt and pepper to taste. Bring to a boil , cover and reduce heat and simmer until pasta is cooked through (about 12-14 minutes). Stir in BBQ sauce and cheese, cook 2-3 more minutes until heated through.

This is one of Mr. MCYM favorite dinners. I have made the recipe a couple times but then lost the recipe! I FINALLY came across the recipe and made Jim a very happy man! This recipe comes from www.damndelicious.com . Although this recipe is called Korean beef in my house , Jim and Robby both call it yakasoba! It does have some similarities, I guess.  I served this with rice but Jim also likes it served with pasta.

INGREDIENTS
1/3 cup packed brown sugar
1/4 cup low sodium soy sauce
1 tablespoon sesame oil
1/2 teaspoon crushed red pepper
1 tablespoon vegetable oil
3 cloves of minced garlic
1 pound ground beef
2 scallions sliced
Rice or pasta

DIRECTIONS
In a small bowl whisk together brown sugar, soy sauce, sesame oil and red pepper flakes. Heat vegetable oil in a large skillet over medium high heat, add garlic and continue cooking until fragrant (about 1 minute). Add ground beef and cook until browned, crumbling the beef as it cooks through. Drain fat and stir in the soy sauce mixture and scallions. Stir until well combined and heated through.

Serve with rice or pasta.

This is not your average ham and cheese…this is ham and cheese on steroids! The inspiration from this dish came from www.pinchofyum.com . This can be done using slider rolls or regular sandwich size rolls. If you are making them for a party and want to do a little bit before hand you can caramelize the onions and make the bacon the day before. You can also assemble the sandwiches ahead of time storing them in the fridge until you are ready to bake. I also think that you could add sautéed mushrooms to this and it would be terrific BUT because I dislike mushrooms you will not see them here! Just sayin! Please feel free to try it and let me know what you think!

I made six sandwiches with these measurements

INGREDIENTS
12 slices of honey ham
6 slices of Swiss cheese
6 slices of thick cut apple smoked bacon (cooked until crisp)
1 large onion, sliced and caramelized
1 tablespoon of butter
1 tablespoon of brown sugar
4 tablespoons of butter at room temperature
1 tablespoon dijon mustard

DIRECTIONS
Preheat oven to 350 degrees.  Caramelize onion by sautéing in a pan with 1 tablespoon of butter. When the onion starts to brown, add 1 tablespoon of brown sugar and continue sautéing until the onions are golden brown.

For the bacon, I bake the bacon in the oven at 300 degrees until crisp, turning as it cooks. (depending on the thickness of the bacon it takes my bacon about 20 minutes)

Mix the 4 tablespoons of room temperature butter with the dijon mustard, set aside.

To assemble the sandwich place the rolls on a baking sheet, spread the butter dijon mixture on the top side of the bun.
Layer the ham, onion, bacon and cheese on the bottom of the roll. Close the roll and bake for 10 minutes, then cover with foil and bake for an additional 5 to 10 minutes until the cheese is melted through. Remove from oven.

Today was one of those days where Mr. MCYM was not going to be home for dinner and it was just Robby and I along with A friend of his.  I wanted something quick and easy!   This sandwich was it.

 

 

 

INGREDIENTS
1 Italian bread loaf
Olive oil to drizzle
1/4 cup banana peppers
1/4 cup Italian mix, Giardiniera
8-10 slices Black Forest ham
8-10 slices Genoa salami
6 slices American cheese
Red pepper flakes (optional)

DIRECTIONS
Preheat oven to 350 degrees.  Slice Italian loaf in half without cutting all the way through. Drizzle both sides with olive oil. On one half spread the banana peppers and on the other half spread the Giardineria. Layer the ham, salami and cheese. Sprinkle with red pepper if desired. Bake on a sheet pan for 10-12 minutes. Remove from oven and close the two sides together and slice!
