I found this recipe at the Food and Wine website and thought it was a great way to change up your typical hot wings! It has your typical ingredients but the one ingredient that caught my eye was adding melted hot pepper jelly! I know right…why didn’t I think of that!! The original recipe calls for the wings to be baked at 500 degrees. Well my oven does not take to cooking that hot so I baked mine at 450 degrees and they were just fine!
INGREDIENTS
2 Tablespoon all purpose flour
1 teaspoon salt
1/2 teaspoon dried garlic
1 teaspoon paprika or smoked paprika
2 pounds chicken wingettes and drumettes
2 1/2 Tablespoons hot sauce, I used Frank’s
2 Tablespoons unsalted melted butter
2 Tablespoons hot pepper jelly, melted
DIRECTIONS
Preheat oven to 450 degrees. Line a large baking sheet with foil and spray with vegetable oil. In a bowl mix the flour, salt, dried garlic and paprika. Add the chicken to the flour mixture and toss to coat all of the chicken pieces.
Spread the chicken out on your baking sheet on a single layer and spray the chicken with vegetable oil. Roast the chicken for 45 minutes turning the chicken two or three times until browned and crispy.
In a bowl whisk the hot sauce , butter and hot pepper jelly. When the chicken is cooked through remove from oven, toss with the sauce and serve warm.

Every now and then I will have a night I just don’t want to cook and when that happens this is the kind of recipe I make. Super simple, throw it all in a baking dish and call it done! But the big question is always, how does it taste? Although both Jim and I liked this the teenagers in my house that night LOVED IT and all of them went back for seconds! If hungry teenagers are happy I am too! It’s a win!
INGREDIENTS
1 (16 ounce) package uncooked rotini pasta
1 (25 ounce) jar of your favorite pasta sauce
3 cups of water
1 (14 ounce) package of fully cooked, mini meatballs (thawed)
1 cup sharp cheddar
1 cup Monterey Jack cheese
1 teaspoon fresh chopped basil
1 teaspoon dried oregano
DIRECTIONS
Preheat oven to 425 degrees. In a large baking dish combine uncooked pasta, pasta sauce, water and meatballs. Cover and bake for 30 minutes. Uncover and add your basil and oregano, stir well and bake uncovered for ten minutes. Remove from oven and serve warm.

Food Network…need I say more? We all know their recipes are tried and true. This recipe is no different and absolutely delicious! My entire family loves this. It was so different, so full of flavor, sweet, savory and a little salty with the added pinch of salt at the end. I highly recommend using a disposable pan to bake these in. I used a baking pan covered in foil and well…not a good outcome at the end. I would have spent three days trying to clean the sauce off of this pan so the pan is no more. To sacrifice one pan for those tasty ribs was okay with me!!!
NOTE: The original recipe calls for them to be grilled, but I baked them in the oven. For grilling recipes check the recipe out at Food Network.
INGREDIENTS
1/2 cup of hoisin sauce
1/4 cup of soy sauce
3 Tablespoons dark brown sugar
2 Tablespoons of honey, plus extra to finish
1 Tablespoon five spice powder
1 teaspoon granulated garlic
1 teaspoon grated fresh ginger
2 racks of spare ribs (St. Louis style) sliced individually into single ribs
Sprinkle of salt at the end of cooking
DIRECTIONS
Mix together the hoisin sauce, soy sauce, brown sugar, honey, five spice powder, garlic and ginger. Take out 1/2 cup of sauce to use while cooking. Place the rest of the sauce in a Ziploc bag and add your sliced ribs. Refrigerate at least three hours, but overnight is best.
Preheat oven to 300 degrees. Place the ribs on cooling rack and then into a large baking sheet (disposable is best). Discard marinade. Cover the ribs and bake for two hours. Remove the tin foil and baste with the reserved marinade. Bake for ten minutes turn ribs and baste ribs, and continue turning and basting one or two more times until all of the marinade is used.and the total cooking time at this point is 2 1/2 hours. At the 2 1/2 time, drizzle the ribs with honey being sure to coat all of the ribs and sprinkle lightly with salt. Turn the oven to broil and let the ribs broil without burning. Your oven door should be left open during the broil time and watch closely as the honey can burn easily at this point. This should only take just a couple of minutes. Remove from oven and serve warm.

Because we don’t have a Panda Express locally when I want that great flavor I need to make it myself! I have seen many copy cat versions of the chow mein but I have to say this one is by far the best I have tried. It cooks in about 15 minutes!! You can certainly add some shredded cooked rotisserie chicken but I kept it as is! This would be a great warm dish to feed the kids as they are in and out at various activities!!
INGREDIENTS
2 packages of dry Yakisoba noodles cooked in the microwave (WITHOUT THE SPICE PACKETS) and drained
3 Tablepoons of oil
8 ounces of pre-packaged coleslaw mix
1 1/2 Tablspoons low sodium soy sauce
1 Tablespoon oyster sauce
DIRECTIONS
Put the oil in a pan on medium high heat. When the oil is hot, add the slaw mix and let it cook until it is slightly caramelized stirring a few times. This only takes about ten minutes. Add your cooked noodles, mixing well. Add the soy sauce and oyster sauce and mix again coating everything with the sauce. Remove from heat and serve warm.

I just love a good Alfredo sauce, don’t you? Rich, creamy, cheesy, and garlicky, but talk about some serious calories. Most Alfredo sauces are made up of lots of heavy cream and butter. The night before I made this, I had made a spicy chicken crock pot dish and had some leftovers. I thought it would be delicious served over pasta with the sauce to cut some of the heat of all of the spices in the chicken! So not really wanting all of the calories of a typical Alfredo sauce I went on a little search for a sauce with fewer calories. I still wanted all of the great taste and if you follow me you know I love Pinterest. That is where my search started and I found this terrific recipe!
INGREDIENTS
1 Tablespoon of butter
3 cloves of garlic, finely chopped
1/2 cup heavy cream
1/2 cup 1% milk (can use whole milk)
1/2 to 3/4 cup freshly grated Parmesan cheese
1 large egg yolk, beaten
Salt to taste
Pepper to taste
Cooked pasta of your choice
DIRECTIONS
Combine butter, garlic, heavy cream and milk in a saucepan over medium heat. Bring to a simmer, remove from heat and stir in Parmesan cheese and the egg yolk whisking constantly to prevent egg from scrambling. If the mixture is too thick add more milk as needed. Add salt and pepper to taste. Serve warm over cooked pasta.
