We ate a lot of salad this summer and this was one of our favorite dressings.  It’s light and fresh and super simple to make! I like making my own dressings as I know what’s in it, no chemicals and simple fresh ingredients that most of the time I have on hand! This dressing will brighten any salad!

INGREDIENTS

2 Tablespoons red wine vinegar
1 Tablespoon Dijon mustard
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/3 cup garlic infused olive oil
Juice of one lemon

DIRECTIONS

Whisk all of the ingredients together. Store in refrigerator until ready to serve. Just before serving, give it a shake!

I came across this single serving microwave cake on Pinterest and I had my doubts, BUT Robby really loved this sweet dessert. One of his all-time favorite things are cinnamon rolls but having those belly issues lately that I have mentioned, has changed his diet to a gluten free one for now. As you can imagine this has been a roller coaster for me trying to meet all of his restrictive needs but that’s why I am so thrilled he loves this as I can make it in under five minutes and he gets all of his favorite flavors! Win, win!

NOTE – the recipe I found called for this to bake in the microwave for one minute but my cake took over one minute thirty seconds. So depending on your microwave, times may vary.

INGREDIENTS
1 scoop vanilla protein powder (use the scoop that comes in the powder)
1/2 teaspoon baking powder
1 Tablespoon coconut flour
1/2 teaspoon cinnamon
1 Tablespoon granulated sugar
1 large egg
1/4 cup unsweetened almond milk
1/4 teaspoon vanilla
1 teaspoon granulated sugar for the top
1/2 teaspoon cinnamon for the top

GLAZE
1 Tablespoon butter or coconut butter, melted
1/2 teaspoon almond milk
Pinch of cinnamon

DIRECTIONS
Grease a microwave safe bowl with cooking spray. Add the protein powder, baking powder, coconut flour, cinnamon and 1 Tablespoon of sugar. Mix well. Add the egg and mix into the dry mixture. Add the milk and vanilla mixing well. Batter will be thick, add a slight amount more milk if needed. Mix together the sugar and cinnamon for the top and sprinkle over the batter. Microwave between 1-2 minutes until the middle is cooked through, you will see the edges slightly pull away from the bowl. Mix the glaze together and drizzle over the top of the cake.

We loved these jalapeño bites! Spicy from the jalapeño and the “hot” sausage cooled slightly with the cheese…with a crisp bite from the bacon! I made two versions, one being bacon wrapped with two kinds of cheese and the second version was gluten and dairy free without the bacon.  Robby did not want the bacon on them. But for Robby’s version I used a gluten and dairy free cheese.  I made 20 bites (10 jalapeños) and let me tell you both plates were empty in record time.  We liked them so much I went to the store the next day and bought more jalapeños. The sausage makes a lot so I had plenty of the filling and bacon left. The filling is also great on nachos or even on pizza. This will be on made many times at my house, even when we hit the road camping! The filling can be made ahead and I would crisp and crumble the bacon and just put the crumbles on top for a camping version.  All you would need to do is assemble them, place on a baking sheet and grill until they are heated through! Our family likes spicy food so I use the hot sausage, but you can use the regular sausage as well.

NOTE – one jalapeno will give you two stuffed portions. I made them twice buying 20 jalapeños in total. Depending on how many you want you can purchase as many jalapeños as needed using all of the filling or using the filling for other yummy things!

INGREDIENTS
jalapeños
1 package Jimmy Dean HOT sausage
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
Bacon- I used a half slice bacon per sliced jalapeños
NOTE – If making them dairy free/gluten free use dairy free, gluten free cheese. I used Daiya brand.

DIRECTIONS
Preheat oven to 400 degrees. Line a baking sheet with foil and place a baking rack on top of the baking sheet, set aside. In a large frying pan fry the sausage over medium heat until fully cooked, crumbling the sausage as it cooks through. Drain any fat from the pan and add both cheeses, cook melting the cheese and mixing it into the sausage making cheeses goodness! Remove from heat and set aside.
Slice the jalapeños in half, using a spoon remove the ribs and seeds from the middle of the jalapeño, do this for each one. To fill, simply fill each jalapeño half with a spoonful of the sausage mixture and wrap 1/2 of a bacon slice around the jalapeño. Do this for each one and place on your prepared baking sheet with the baking rack. When all of the jalapeños are filled and wrapped bake in the preheated oven for 25 minutes or until bacon is cooked through and lightly crisped. Remove from oven and serve warm.

These meatballs came together fairly quickly and the sauce was delicious, creamy smooth and full of flavor. Although Jim and I both agreed the meatballs were very good, the next time I make this I am going to roast some shrimp and add that to the sauce instead of the chicken meatballs. I served this over rice keeping it gluten free for Robby, but you can certainly serve this over pasta as well.

INGREDIENTS
1/2 cup roughly chopped carrots
1/4 cup red onion, chopped
1/2 to 1 Tablespoon dried cilantro (I used 1/2 T)
Juice of one lime
2 Tablespoons fresh basil
1 Tablespoon low sodium soy sauce
1 teaspoon ginger
1 clove garlic
1/2 teaspoon cumin
1/4 teaspoon red chili flakes
Salt
Pepper
1 pound ground chicken

SAUCE INGREDIENTS
1 can coconut milk
1 Tablespoon red curry paste
1 Tablespoon almond butter
2 Tablespoons lime juice
1 teaspoon minced garlic
Rice or pasta to serve

DIRECTIONS
Preheat oven to 400 degrees. Place all of the meatball ingredients except the ground chicken in a blender or food processor and pulse until chopped. In a large bowl add the ground chicken and the ingredients from the blender, mix until combined. Roll the meat mixture into about 1 1/2 inch balls and place them on a lined baking sheet. Bake for 20 minutes, roll the balls over and continue baking for an additional 10 minutes.
For the sauce – in a large skillet over medium heat add the coconut milk, add the rest of the sauce ingredients and simmer for ten minutes stirring constantly. Add the meatballs to the sauce coating them and serve over rice or pasta.

This hamburger casserole was so easy and you can add whatever condiments you want just as you would a hamburger. I added some pickles and both Jim and I thought it was just what this dish needed for that little extra flavor. I also added dairy free cheese for Robby because  of his ongoing belly issues as he is currently not eating gluten or dairy. You can add whatever cheese you like. And use any gluten free pasta you like. If I did not tell anyone this was gluten free, I’m not sure anyone would have known.

 

 

 

INGREDIENTS
1 pound ground beef
1 Tablespoon olive oil
2 small white onions, chopped
1 Tablespoon minced garlic
8 ounces tomato paste
1 can diced tomatoes (15 ounce)
3-4 cups gluten free pasta, cooked al dente
2-4 Tablespoons yellow mustard
Pinch of salt
Pinch of pepper
1/4 cup cheddar cheese or your choice of cheese

Any condiments of your choice

Pickles
Additional cheese
Tomato

DIRECTIONS
In a large saucepan on medium heat add olive oil, brown the onion and garlic. Add ground beef and cook until ground beef if cooked through. Drain any grease from pan. Add tomato paste, diced tomatoes, cooked pasta and stir until heated through. Stir in mustard, cheese, salt and pepper. Add your topping and serve warm.
