A few weeks ago I was on the hunt for a simple and healthy cookie.  Well the recipe I tried was awful and ended up in the trash, but not this one! This is so simple and so easy with all of the ingredients I have on hand!! This made 18 cookies and came together in just minutes! Did I mention only four ingredients! The taste was very good.  I will be making these again very soon!

 

INGREDIENTS
2 very ripe bananas
1 huge spoonful of peanut butter ( I used Jiff all natural creamy)
1 heaping cup of oats
Dark chocolate mini chips (I used less than a half a cup)

DIRECTIONS
Preheat oven to 350 degrees.  Mix banana’s , peanut butter and oats together until well combined and banana is mashed through. Add the chocolate chips mixing them throughout.  Spoon by small tablespoon onto a baking sheet sprayed with non stick baking spray and bake for 10 minutes. The bottom of the cookies will be slightly browned.
remove from oven and cool on a baking rack.

imageChocolate Beer Bread! Move over banana bread, there is a new bread in town and it is here to stay!! This is so good, lots of chocolate flavor and chocolate chips and  no one could ever guess it is made with beer! Crazy right? Well this recipe comes from my dear friend, Kathy, who is also someone who enjoys cooking and baking really good food! I work with Kathy at the high school and when we have a few moments together we find ourselves talking about our latest and greatest recipes. Kathy is a french teacher who loves to teach, travel, cook and spend time with good friends and family, I hope you enjoy Kathy’s recipe as much as I do!

INGREDIENTS
2 cups all purpose flour
1/2 teaspoon salt
2/3 cup cocoa powder
1 cup white sugar
1 Tablespoon baking powder
1 Tablespoon corn starch
3/4 cup chocolate chips
10 ounces chocolate beer  (I used Decadent dark chocolate ale, but if you cannot find chocolate beer you can also use stout, but this will change the taste of the bread)
2 Tablespoons vegetable oil
2 Tablespoons melted butter

DIRECTIONS
Preheat oven to 350 degrees. Add flour, salt,cocoa powder, sugar, baking powder, cornstarch and chocolate chips in a large bowl and stir to combine. Add the beer and melted butter and stir until combined.   This will be a thick batter. Pour into a loaf pan that has been sprayed with non-stick baking spray. Bake for 45 minutes or until a tooth pick inserted in the center comes out clean. Cool before slicing.

Recipe Note- after tasting this amazing chocolate beer I have decided this would be a great beverage to make a root beer float! Swap the root beer for the chocolate beer! Yup!! Just might have to try that!!

With Summer approaching and wanting something that just screams Summer,  I came across this recipe and could not wait to give it a try. This was tart, sweet and so delicious! I did share some of this with neighbors and co-workers and everyone said the same thing “this screams Summer”.  It tasted lighter than I had expected too!! If you have a Spring or Summer get together, this is a great dish to make and the best part is that it needs to be made ahead!

INGREDIENTS
Crust
3 cups graham cracker crumbs
4 Tablespoons granulated sugar
3/4 cup of melted butter

Cheesecake
3 – 8 ounce packages of cream cheese (softened)
1 1/2 cups powdered sugar
2 cups heavy whipping cream
3/4 cup Country Time lemonade starter in the berry lemonade flavor.  DO NOT DILUTE
Fresh raspberries for garnish

DIRECTIONS
Combine the graham cracker crumbs , sugar and melted butter in a bowl mixing well. Press this mixture into a 13×9 inch pan. In the bowl of a stand mixer beat the softened cream cheese and powdered sugar until light and fluffy. Pour in the heavy whipping cream, lemonade starter and beat for another 3-4 minutes.  It started out very runny but will thicken. Scrape down the bowl a time or two during this process to get everything well incorporated. Once it thickens and firms up spread the mixture of top of the crust mixture and refrigerate for 4 hours before cutting. Garnish with fresh raspberries.

I know we all get tired of the same old chicken dishes but I have to say this is one of the simplest chicken dishes I have made.  I was not disappointed with the flavor! I really like when everyone takes the first bite and my house is silent.  I know it’s good!  This is one of those dinners! I served this with rice and a salad, how simple is that?! Did I mention it’s only three ingredients?  Yup! I love that too!!

 

 

INGREDIENTS
4 boneless, skinless chicken breasts
1/2 cup of packed brown sugar
1 1/2 packets of dry Italian salad dressing mix.  I used Good Seasons,  0.07 ounces per pack.

DIRECTIONS
Heat your oven to 350 degrees. Mix the brown sugar and 1 1/2 packages of the dry salad dressing mix and place in a shallow pan. Coat both sides of the chicken in the dry mixture and place in an oven proof dish.  When all of the chicken is coated, place in the oven and bake for 30 minutes. After the thirty minutes baste the chicken with the pan juices and bake until chicken is cooked through. My chicken took 40 minutes, but it depends on the size of your chicken pieces. Serve warm.

I wanted something a little different for a fruit salad and I came across this recipe from an old cookbook and 6 out of 7 of us loved it! Amanda was the only one who really was not thrilled although I put the pudding mix on about an hour before serving.  I think next time I would put it on sooner.  I think that might make her a believer!! This will make your family and friends wonder what that secret ingredient is!

 

 

INGREDIENTS
2 Tablespoons dry instant vanilla pudding mix
1 pound of strawberries sliced
1/2 pint blueberries
1/2 pint raspberries
1/2 of a pineapple, cut in cubes
Green grapes

DIRECTIONS
Mix all of your fruit together and sprinkle with the dry pudding mix. Store in fridge for 3 hours before serving.
