This cake is delicious! I will be keeping this recipe very close. We shared it with some friends and they loved it as much as we did. I knew exactly where Jim was when I could not find him. He was sneaking a piece of this cake! I love the fresh summer flavors this cake has and it’s so easy to make! This is perfect for any summer gathering you are going to.
INGREDIENTS
1 box lemon cake mix
1/2 cup fresh lemon juice
1/2 cup milk
14 ounces sweetened condensed milk
3/4 cup raspberry preserves
4 ounces cream cheese
3/4 cup lemon curd
8 ounce container of Cool Whip, thawed (I used low fat)
Fresh raspberries for garnish
DIRECTIONS
Make the cake mix according to the package EXCEPT substitute the lemon juice and milk for the amount of water that is called for. Spread the batter into a greased 9 x 13 baking dish and bake in a 350 degree oven for 25-27 minutes or until a toothpick inserted comes out clean. Let the cake cool for 5 minutes. Then take a fork and poke holes throughout the cake, pour the sweetened condensed milk slowly over the top of the cake, being sure to cover the cake completely and over the holes. Place the raspberry preserves in a microwave safe bowl and microwave for 15 seconds stir until melted. Spread the preserves over the entire cake. Let the cake cool for an hour on the counter then refrigerate until chilled through. Beat the cream cheese until creamy, add the lemon curd and beat again until smooth. Fold the Cool Whip into the cream cheese mixture and spread it over the chilled cake. Serve with fresh raspberries.

When I was in Key West, there was this fabulous little Cuban convenience store that made and sold some of the most delicious pastries! This little store was in walking distance from where we were staying, so we found ourselves getting up and walking over for coffee and pastries. When I got home, I described this pastry to Jim and he did not look excited in the least about it. But he changed his mind and very quickly at his first bite of my re-creation! He LOVED this, and loved it so much I made them again a couple days later and they vanished just as fast as the first batch!! These are so simple and oh so tasty!!
INGREDIENTS
One box frozen puff pastry, thawed according to package directions.
Guava paste or any flavor fruit paste. I used plum (found in the gourmet cheese area of your store)
Mascarpone cheese (can use cream cheese)
1 egg plus teaspoon of water.
2 teaspoons granulated sugar
DIRECTIONS
Preheat oven to 375 degrees.
Line your baking sheet with parchment paper and unroll one of the puff pastries placing it on your baking sheet. I made 8 pastries so slice your fruit paste into eight sections and spread them evenly, making two lines across the pastry sheet leaving enough room on all sides to seal. Add a sliver of the marscarpone cheese on top of each of your fruit paste slices.
Top the entire thing with the second sheet of puff pastry. Using your hand gently push the puff pastry down making 8 pastry pieces. Be sure to seal the puff pastry VERY WELL so the filling does not run out when baking! Mix the egg and water together making an egg wash and brush over the tops of the pastries. Sprinkle with sugar and bake for 20-25 minutes until the pastry is browned and cooked through. Let cool for five minutes. Serve warm.

I came across this lime dip on Pinterest and I thought this would be a huge hit at our house as we all like that tart flavor. To my surprise this came in with mixed reviews. Jim and I really liked it, but Robby and his friends did not like it at all! This dip is tart and sweet at the same time. I served it with chocolate wafer cookies, shortbread cookies and fresh strawberries. I think you will have to let your family/friends decide on this one! With just a few ingredients and no baking it’s worth giving it a try!
INGREDIENTS
1 (8 ounce) tub fat free Cool Whip
1/2 cup fresh squeezed lime juice
1 can sweetened condensed milk
SERVING SUGGESTIONS
Chocolate wafer cookies
Shortbread cookies
Graham crackers
Strawberries
DIRECTIONS
Mix all ingredients together until smooth, garnish with lime zest, if desired.
Store in fridge until ready to serve.

I was looking for a simple dessert recipe for a friend that has been under the weather and I came across this simple cookie recipe on Pinterest. This recipe makes about two dozen very tasty cookies. I sent some over to my friend and brought the rest to our daughter the next day and she and Steve (her better half) really enjoyed them! We enjoyed these so much that I am making another batch later today!
INGREDIENTS
2 cups all purpose flour
1 teaspoon baking soda
1 Tablespoon corn starch
1 teaspoon salt
1/2 cup butter, softened
2 ripe banana’s, peeled
1 cup brown sugar
1/4 cup granulated sugar
2 teaspoons vanilla extract
1 cup chocolate chips
1 cup peanut butter chips
DIRECTIONS
Whisk together flour, baking soda, corn starch, and salt in a medium bowl and set aside. Cream together butter, bananas and sugars until light and fluffy. Add vanilla to the butter mixture and combine. Slowly stir in the flour mixture a little at a time. Add the chocolate chips and peanut butter chips and stir to combine.
Refrigerate dough for 30 minutes.
Preheat oven to 375 degrees. Lightly spray two baking sheets and using a cookie scoop or a spoon, dollop a couple tablespoons of dough onto the cookie sheets and bake 8 – 10 minutes until lightly golden brown on the bottom. Remove from oven and let cool for a couple minutes on the baking sheet. Remove cookies to a cooling rack and let cool. Or serve warm with a cold glass of milk!

This is the easiest cake I think I have ever made! Super simple and excellent ! There is also no butter or oil in this cake! Throw all of the ingredients together and bake, that’s it! If you really want to keep it simple you can buy the frosting insead of making it! I won’t tell anyone!

2 cups sugar
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
Pinch of salt
1 (20 ounce) can of crushed pineapple NOT drained. In its own juice, not syrup.
CREAM CHEESE FROSTING
1/2 cup of butter
8 ounces of cream cheese, softened
1 teaspoon vanilla
1 1/2 cups confectioners sugar
1 cup of chopped nuts, pecans or walnuts, optional
DIRECTIONS
Preheat oven to 350 degrees. Mix all of the cake ingredients together in a large bowl, mixing well. Including the juice from the crushed pineapple. Pour into a greased 9 x 13 baking dish. Bake for 35-40 minutes, until the top is golden brown and baked through.
For the frosting, mix the cream cheese and butter together until well combined add the vanilla and slowly add the confectioners sugar mixing until well combined. Once the cake is cooled, frost and add the chopped nuts to the top if desired.
