imageThis is a Taste of Home recipe that I recently reviewed. We really enjoyed this recipe.  It would be great with a cup of coffee in the morning or as a dessert in the evening with a scoop of ice cream! This apple cake is sweet, but not over the top sweet. The added cinnamon sugar on the top makes a wonderful crust! Such a simple tasty recipe, go ahead and give it a try!!

INGREDIENTS
3/4 cup of sugar
1 teaspoon baking powder
1/4 teaspoon salt
2 eggs, beaten
1/2 teaspoon vanilla extract
1 medium Granny Smith apple, peeled and chopped
1/2 cup chopped walnuts

TOPPING
1 1/2 Tablespoons sugar mixed with 1 teaspoon cinnamon

DIRECTIONS
Preheat oven to 375 degrees.  In a bowl combine sugar, flour, baking powder and salt. Add eggs and vanilla mixing well. Stir in the apples and walnuts.  Spread into a 9 inch pie plate and sprinkle with the cinnamon sugar mixture.
Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean.  Best served warm.

I could not let this recipe go by with out posting it! I know summer is coming to a close but these little bites are so tasty! You can also make these using blueberry pie filling but don’t even think about taking out the lemon juice or zest as it adds so much flavor and such a brightness to the recipe!!
I have really been loving all of these Pinterest recipes lately!!

 

 

INGREDIENTS
2 (8 ounce) packages cream cheese at room temp.
3/4 cup sugar
3 large eggs
1 teaspoon vanilla extract
1 Tablespoon fresh squeezed lemon juice
Dash of lemon zest
Mini vanilla wafers
1 can of strawberry pie filling (or blueberry)

DIRECTIONS
Preheat oven to 350 degrees.  Fill a mini cupcake tin with mini cupcake liners and out one mini vanilla wafer in each liner with the flat side on the bottom. Mix the remaining ingredients together except for the pie filling. Cream together until week incorporated and smooth.  Fill your cupcake liners about 3/4 of the way up. Bake for 18-20 minutes or until the center is set.  Remove from oven and let cool before adding the topping. When completely cool add the pie filling to the top and serve.  Store in the refrigerator .

I have been seeing a number of banana pudding cakes recipes. I thought I would share mine. I have been cutting down or completely eliminating some oils out of a number of my recipes and replacing it with applesauce and this recipe is no different! No oil here but a moist flavorful cake!!

 

 

 

INGREDIENTS
1 package yellow cake mix (18.25 ounces)
1 package instant banana cream pudding mix (3.5) ounces
4 eggs
1 cup of water
1/2 cup applesauce
3 bananas
2 Tablespoons brown sugar
1 teaspoon baking soda
3/4 cup mini chocolate chips
3/4 cup chopped pecans
Sprinkle of cinnamon
2 tablespoons confectioners sugar

DIRECTIONS
Preheat oven to 350 degrees. Spray a bundt pan with a non stick spray and sprinkle a couple dashes of cinnamon around pan and set aside.  In a large bowl stir together cake mix and pudding mix. Make a well, in the center of the bowl and add the eggs, water, and applesauce. Beat on low speed just until blended. Mash the bananas and brown sugar together in a separate bowl and once they are well combined, add to the batter.  Then add the baking soda and mix on medium speed until combined. Stir in chopped pecans and mini chips until combined. Pour into prepared bundt pan and bake for 50 minutes, watching the last few minutes of baking so as not to  burn. Let cool in pan for 30 minutes.  Turn out onto a platter and once completely cooled dust with confectioners sugar.

I know you are asking how can chocolate cake be almost healthy and taste good? Well,  there is no butter or oil in this cake but it DOES have bananas and applesauce! And is it good? It is excellent! Full of chocolate flavor and moist!! It is delicious and I will make this again! You can serve this as is or if you really want to make it special, serve it with a small scoop of black raspberry chocolate chip Gelato!

INGREDIENTS
3 medium ripe bananas
3/4 cup brown sugar
1/2 cup applesauce
1 teaspoon vanilla
1 egg, lightly beaten
1 cup flour
1/2 cup cocoa powder (I used Hershey’s special dark chocolate)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semi- sweet mini chocolate chips plus some for sprinkling on top if desired.

DIRECTIONS
Preheat the oven to 350 degrees and coat an 8 x 8 inch pan with baking spray. Set aside. Combine mashed bananas and sugar into a large mixing bowl and stir until sugar is dissolved and well combined. Add the applesauce, vanilla and egg.  Stir to combine.  Add the flour, cocoa powder, baking soda and salt stirring well to combine. Fold in one cup of the mini chocolate chips and pour into your prepared pan. Top with more mini chips, if desired, and bake for 25-30 minutes.  Mine took 26 minutes.
Let cool, slice and serve.

imageLast weekend we spent some times in Portsmouth N.H. walking, shopping and then off to enjoy one of our favorite restaurants, the Flat Bread Pizza Company. The Flat Bread company started in Amesbury MA. in 1998. They are all organic and source most of their ingredients from local farms. They now have 11 restaurants with most of them being in the New England area and one in Hawaii. While we were there, we had a funny conversation with our waiter.  He asked us what we wanted to drink and my husband asked him if they had diet Coke thinking there is no way this organic place is going to have diet Coke! Well guess what,  the waiter laughed and said well, yes we do!  He said that is the one and only thing that is NOT organic in the restaurant as the owner loves his diet Coke and was not giving it up!  Needless to say Jim was pleasantly surprised.
This was kind of a strange day for Jim and I as it was our son, Robby’s 18th birthday, and he was celebrating his birthday with his uncle Barry and aunt Sydney SKYDIVING! He traveled completely across the country on his own to jump out of a plane at Skydive Elsinore  in Southern California with his uncle! Crazy if you ask me, but if you look at the pictures you can see he really enjoyed his time! So Jim and I spent the day shopping and celebrating without him and we even got dessert which we never do!

imageOn to the food! One of our favorite pizza’s is the taco flat bread pizza as it is delicious! All of your favorite Mexican flavors in a pizza! This is made with all natural beef from Neiman Ranch with homemade organic taco seasoning, organic red onion, cilantro, tomatoes, crushed tortilla chips, whole milk mozzarella, imported Parmesan cheese and their own garlic oil and blend of organic herbs. IT is then finished off with shredded lettuce and sour cream! Absolutely delicious!

We also ordered another flat bread pizza that was a special that day. It was a sweeter pizza with organic Granny Smith apples, a maple glaze with thick cut crispy bacon and of course lots of cheese! This too was very good! But wait there is more ! We also had the brownie sundae! IT was Robby’s birthday after all!  The brownie sundae was so good. The brownie gets heated in the wood burning oven and topped with two scoops of ice cream, chocolate sauce, fresh whipped cream and a sprinkle of powdered sugar! This was warm, so chocolately and gooey, gooey goodness!
