One of my favorite things in fall is the crisp apples right from the orchards. I like them simply as is or in baked goods! I came across this recipe on Pinterest from the “Pinch of Yum” food blog and knew I just had to try it. When my Dad asked me to cater an event he was hosting (for 10 people) I knew this cake was going to be the dessert! Don’t tell my Dad if you see him, but there just may have been a piece missing before I gave it to him, for taste testing purposes, of course! A daughter has to do what a daughter has to do!
When my Dad got home he called me to tell me how much the cake was enjoyed by everyone and there was not one piece left! Not only do I give this cake a thumbs up but the full group does too! Perfect for any fall gathering, or just because!

INGREDIENTS
1 1/2 cups brown sugar
1/3 cup oil
1 egg
1 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
2 1/2 cups flour
1 1/2 chopped apples, I used honey crisp
1/2 cup sugar
1 teaspoon cinnamon
1 Tablespoon butter

DIRECTIONS
Preheat oven to 325 degrees. In a large bowl mix the brown sugar, oil, egg, buttermilk, baking soda, vanilla, and flour together. Fold in the chopped apples and pour the batter into a  9 x 13 pan.
Combine the cinnamon, sugar, and butter together to make the topping. Sprinkle evenly over the batter.
Bake for 45 minutes.

I’m back! It’s been a busy summer and I have a lot of catching up to do with so many delicious recipes coming your way.  This German Apple Cake is perfect for any fall gathering you may be having. This is my favorite time of year to cook with all the fresh picked off the tree apples we have in New Hampshire. I made this cake using both Honey Crisp and Granny Smith because I love that apple combination but you can use any apple you love. Another variation you can do with this cake is using caramel sauce on the top instead of the frosting. No matter how you make it I know your family will enjoy it as much as mine did.

INGREDIENTS
3 large eggs
2 cups of sugar
1 cup vegetable oil
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
4 cups chopped peeled apples, Granny Smith
3/4 cup chopped pecans

FROSTING
1 package cream cheese, 8 ounces
2 teaspoons softened butter
2 cups confectioners sugar

DIRECTIONS
In a large bowl beat the eggs, sugar, oil, and vanilla. Combine the flour, cinnamon, baking soda, and salt. Add to the egg mixture and mix well. Fold in apples and nuts. Pour into greased 13×9 baking dish. Bake at 350 degrees for 55 – 60 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
For the frosting- in a small bowl beat cream cheese and butter, add the confectioners sugar and continue beating until smooth. Spread over the cooled cake and enjoy. Store in the fridge.

I know you are wondering “What is crack cake?” I wondered that too until I read the recipe! This recipe has all the usual suspects but has a little extra butter, sugar and the secret ingredient is WINE, yes wine! Sounds a little crazy I know and I was a bit skeptical at first but after one bite I know why it has the name it has! The first time I made this cake I shared it with my parents.  I only gave them a couple pieces as I know my dad is not really a cake guy. He is more of a pie guy but later that night I had a call saying that was the best cake my dad ever had! Well then…I knew I would be making this cake often after hearing that.  Lucky for them they celebrated their anniversary a week later and guess who had an entire cake to celebrate! I’m pretty sure they enjoyed it! I have made this cake a number of times since the first time and although I always mention I don’t like to bake, this is an easy cake I can whip up in no time so go ahead and surprise friends with some cake!

INGREDIENTS
For the cake:
1 box yellow cake mix, your favorite brand
1/4 cup brown sugar
1/4 cup white sugar
1 box vanilla instant pudding mix
2 teaspoons cinnamon
4 eggs
3/4 cup water
3/4 cup oil
1/2 cup white wine – any wine you like to drink

For the glaze-
1 stick of butter
1 cup sugar
1/4 cup white wine

DIRECTIONS
Preheat oven to 350 degrees.  Mix all of the cake ingredients together by hand or a hand-held mixer until well combined. Grease a bundt pan with non-stick baking spray and pour the batter into the well greased pan. Bake for 50-60 minutes.  You can check for doneness by inserting a toothpick into the center of the cake and when it comes out clean, the cake is done. When done remove from the oven and set aside.
In a small saucepan, melt the stick of butter, add the sugar and wine. Mix the glaze over medium heat until the sugar is dissolved and everything is combined.
Using a toothpick poke holes throughout the top of the cake while still in the pan. Pour the glaze mixture over the cake letting the glaze seep into the cake. Continue to let the cake cool for about 20 minutes. Long enough for the cake to absorb all of the glaze.  Flip the cake out of the pan onto a cake plate and serve.

My family loves apple cake and it’s not just a fall favorite for us. I make apple cake year round but when I saw this recipe by www.afamilyfeast.com, I knew I had to make it and I’m so glad I did. This cake reminded me of my Mother-in-Law, Joan’s apple cake. Sadly Joan has passed and I don’t have her recipe but this was the closest I have tasted to her wonderful cake! Needless to say, this is a keeper that I will be making many, many more times!

 

INGREDIENTS FOR THE CAKE
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups vegetable oil
1 1/2 cups granulated sugar
1/2 cup brown sugar
3 eggs
2 teaspoons vanilla
3 large apples, peeled and cut into large pieces – I used a combination of Granny Smith and Honey Crisp
1 cup chopped walnuts – optional

INGREDIENTS FOR THE GLAZE
3 Tablespoons Butter
3 Tablespoons brown sugar
3 Tablespoons granulated sugar
3 Tablespoons heavy cream
1/4 teaspoon vanilla

DIRECTIONS
Preheat oven to 325 degrees. Grease and flour a 12 cup bundt pan and set aside.
In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
In a bowl of a stand mixer combine oil, both sugars, and mix until well blended.
Add eggs one at a time mixing after each one. Add vanilla and mix again. Add the whisked dry ingredients to the batter a little at a time until it’s all combined. By hand fold in apples and walnuts and mix until evenly combined.
Spoon the batter into your prepared pan bake for 1 hour and 15 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove cake from oven and allow the cake to cool in pan for 20 minutes.
While the cake is cooling, you can prepare the glaze in a saucepan over medium heat. Combine all of the ingredients. Bring to a boil and allow to boil for 1 minute. Remove glaze from the heat.
Remove the cake from the pan onto a serving plate. Spoon the glaze over the warm cake and allow to cool a little longer before serving.

This is another zucchini recipe for you. Although this one is not as healthy as yesterday’s, it’s just as tasty and your friends and family will never know about that zucchini that’s in there. A friend shared this recipe with me and said I would not be disappointed and I most definitely was not disappointed! This cake has that yummy chocolate flavor you want without all the guilt or… maybe just a little less guilt!

 

INGREDIENTS
2 cups of flour
2 cups of white sugar
3/4 cup unsweetened cocoa powder
2 teaspoon baking soda
1 teaspoon baking powder
4 eggs at room temperature
1/2 teaspoon salt
3/4 cup canola oil
3/4 cup applesauce
3 cups grated zucchini, not drained
3/4 cup semi-sweet chocolate chips

DIRECTIONS
Preheat oven to 350 degrees. Spray a 9 x 13 baking pan or a bundt pan and set aside.
Mix together the flour, sugar, cocoa powder and salt. Add the eggs, oil, and applesauce and mix well.  Fold in the zucchini and chocolate chips. Pour into prepared baking dish and bake for   50-55 minutes.   Check after 40 minutes. Cool cake and dust with powdered sugar if desired.
