I don’t know about your house,  but at my house there always seems to be a bag of Dorito’s  hanging around so when I was looking for something easy to make Dorito salad was it. Everyone has their own way of making it,  but this is mine.

 

 

INGREDIENTS
Shredded lettuce
Diced cherry tomatoes
1/2 cup Monteray jack cheese, shredded
1/2 cup sharp cheddar cheese, shredded
1 1/2 pounds ground beef
1 package low sodium taco seasoning
1 can black beans, rinsed and drained
1 can of corn, drained
French dressing
Crushed Dorito’s

DIRECTIONS
In skillet, brown ground beef over medium heat. Drain liquid from the bottom of the pan and add the taco seasoning mix well and add corn and beans to warm through. remove from heat. Shred lettuce, dice tomatoes, grate cheese (or use shredded).

Time to build your salad.   Starting with the lettuce, add tomatoes, cheeses, ground beef, beans and corn.  Add French dressing and crushed Dorito’s.

These Swedish meatballs were terrific, but if you ask Robby his exact words were “those were awesome, thank’s Mom!”  The sauce is rich, creamy and full of meaty flavor.  I found this recipe over at the damn delicious blog and I am so happy I did.   I will be making these often.

INGREDIENTS

MEATBALLS
2 Tablespoons olive oil
1 onion, diced
1 pound ground beef
1 pound ground pork
1/2 cup Italian seasoned Panko crumbs
2 large egg yolks
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
Salt
Pepper

GRAVY
1/4 cup unsalted butter
1/3 cup all purpose flour
4 cups beef broth
3/4 cup sour cream
Salt
pepper
Chopped fresh parsley (optional)

DIRECTIONS
Heat one tablespoon of oil in medium heat. Add onion and cook stirring frequently until onions are translucent and tender. Set aside and cool.

In a large bowl combine ground beef, ground pork, panko, egg yolks, allspice and nutmeg. Add cooled onion. Season with salt and pepper. Mix well. Roll into about 24 meatballs.

This goes out side of the original recipe as I like to refrigerate the meatballs on a sheet pan for about an hour as I find the meatballs will not fall apart when browned if you do this.

Add remaining tablespoon of olive oil to the skillet, add meatballs in small batches, until all sides are browned. Transfer to a paper towel lined plate.

To make the gravy,  melt butter in pan, add flour and whisk until lightly browned. Gradually add beef broth and cook whisking constantly until slightly thickened. Stir in sour cream, season with salt and pepper to taste.
Stir in meatballs and finish cooking in sauce. It took about 30 minutes for my meatballs to finish cooking, but it will depend on the size of the meatballs. Sprinkle with Parsley if desired.
Serve over buttered noodles.

As those of you that know us , you know that Jim does not cook very often, but I have to tell you when he does it is ALWAYS delicious! This particular recipe is his own recipe that he adapted from HIS Mom’s recipe! We all love this recipe, although it does take most of the day and does have a number of ingredients.  I can promise you not only will your house smell soooo good all day long I also know that you will enjoy it and an added bonus… it feeds a crowd!

 

 

 

INGREDIENTS for sausage and sauce
6 hot sausage links
6 sweet sausage links
2 cans (28 ounces) diced tomatoes
2 cans (6 ounces) tomato paste
1 small onion, diced
1 green bell pepper , diced
3 ounces of white wine (any kind YOU like)
2 cloves crushed garlic
Salt
Pepper
12 ounces of water
1 teaspoon of sugar
1 teaspoon basil
1 teaspoon oregano
1 tablespoon parsley

INGREDIENTS for meatballs
1 1/2 pound 85% ground beef
1 egg
1/8 cup of milk (we use 1%)
1/2 cup Italian bread crumbs
1 tablespoon of the spaghetti sauce
Salt
Pepper
1 teaspoon basil
1 teaspoon oregano
1 tablespoon parsley
Pinch of rosemary
Pinch of crushed red pepper flakes

1 pound of thin spaghetti (boiled for 9 minutes). In a LARGE saucepan start by browning the sausage links. Remove links from pan. Using the same pan, add the diced, onions, peppers and the crushed garlic cloves along with the wine, salt and pepper. When the onions and peppers are soft, add the diced tomatoes, tomato paste, water, basil, oregano, parsley,and sugar. Bring to a boil for 3 minutes. Turn heat down to a simmer. Add the sausages back into the saucepan with the sauce.

While tomato sauce simmers it is time to make the meatballs.  Mix ALL of the meatball ingredients together. Roll into any size meatball you like and add the meatballs into the sauce and simmer for three hours.

I know everyone has their own meatloaf recipe or maybe their Mom’s, but I can promise you this meatloaf recipe is NOT like any of the recipes you have had. The only thing you may recognize is the ketchup-brown sugar topping. This topping compliments the spice of the meat nicely!  When meatloaf is on the table at our house everyone is at the table ready to eat and calling dibs on any leftover’s! I hope you enjoy it as much as my family does!

 

 

 

 

INGREDIENTS
1 Pound Jimmy Dean “HOT” sausage
1/2 pound ground beef
3/4 cup milk ( I use 1%)
2 eggs
Salt
Pepper
1 small onion, diced
3/4 cup Ritz crackers ( or plain Panko crumbs)

TOPPING
1/2 cup packed brown sugar
1/2 cup ketchup

DIRECTIONS
Preheat oven to 350 degrees

Add all the Ingredients in a large Ziploc  bag or a large mixing bowl (except topping ingredients).  Mix all ingredients until well combined. Place mixture on a baking sheet and form into one large “loaf”. Combine topping ingredients in a small bowl, mix well.
Pour topping mixture over the meatloaf covering the top and sides of the “loaf”.
Bake for one hour or until juices run clear.

Well, those of you that know me know that I am a faithful and devoted viewer of Food Network, it is on ALL the time! I have even turned my parents cat into a devoted viewer, I bet you wonder how I did that? Well…when my parents go away on vacation I get the job of taking care of their adorable little “Daisy” a cute little Bengal kitty. When they go away they like to leave the television on so daisy has something to listen to.

Well, my Dad likes to leave the golf channel or a news channel on for her, but lets face it, golf??? Really? Can you hear me snore? Well I get right over there and save that poor kitty from the very boring world of golf (sorry golf fans). She is now a dedicated food network viewer!  Such a good cat!

 

Anyway on to a fantastic, finger licking, oh so delicious, recipe from Ree Drummond, Pioneer Woman! If you are not a foodie but love great recipes go to Ree’s website, The Pioneer Woman, you will not be disappointed! I did not change this recipe at all. You cannot beat perfection! The only note I would make is that I like to use a honey BBQ sauce to temper the heat from the jalapeño slices.

INGREDIENTS
2 pounds ground beef
salt
pepper
4 Tablespoons of butter
1 large onion, diced
1/2 cup of whiskey
1 cup of BBQ sauce
1/4 cup of jarred Jalapeño slices (or more if you like)
12 slider buns or dinner rolls, split

DIRECTIONS
Form the meat into 12 (or so) mini patties. salt and pepper both sides.

Melt the butter in a large skillet over medium high heat and cook the patties until just about done in the middle. Remove patties from skillet and set aside. Drain off all but 2 tablespoons of grease, then return skillet to stove top.

Add the diced onion into the skillet, stir to cook for about three minutes. Pour in the whiskey being very careful if you have an open flame, and stir. Allow the whiskey to reduce by half, just takes a couple minutes.

Stir in Jalapeños and BBQ sauce.

Reduce the heat to low and place the patties back into the skillet. turn the patties over allowing the sauce to coat the patties. Let patties simmer until everything is hot and bubbly.

Place patties on individual buns and spoon extra sauce over the top of each one and top with other half of the bun.
