Apple season is here and we love it! Apple pie, apple crisp and apple dip! Robby wanted an apple dip so I used what I had on hand it it was delicious! It is best made ahead of time, about two hours. It’s perfect for any fall gathering you might be having! I hope you like it as much as we do!
INGREDIENTS
8 ounces fat free Cool Whip
1 box (3.4 ounces) French vanilla pudding mix
1/4 cup pre-made caramel sauce
1/4 – 1/2 cup milk
Sliced apples for dipping
DIRECTIONS
In a large bowl mix the Cool Whip, the french vanilla pudding mix (powder only) and the caramel sauce. Mix until well combined, add the milk a little at a time until the mixture is smooth and creamy. I used just under a 1/2 cup of milk. This is best made early and kept in the fridge for 2 hours before serving. Slice apples and serve after chilling.

I have so much to tell you about British Beer Company! We went to their Manchester location at 1071 South Willow Street. They have a number of locations in Massachusetts and NH including one in Portsmouth NH. They are open daily at 11:00 am. Jim and I have both heard great things about this restaurant and everything we heard was exactly right!
We were promptly greeted and seated with our menu and water in no time! We decided quickly on an appetizer and ordered the Sausage Rolls at $8.99. The sausage rolls are British Bangers wrapped in a puff pastry and baked until golden brown. These are served with English beer mustard for dipping. Both Jim and I really liked this dish. The puff pastry was crispy, the sausage had a great flavor, but not overpowering and the mustard was perfect. It added that little bit of tang to the dish! We would definitely order that again!
There was really so much to choose from on their menu and not just the bangers and mash or the fish and chips which you might expect. I had the Buffalo Chicken Ranchero Salad. ($11.99) This had crispy chicken pieces tossed in their house made buffalo sauce with field greens (you choose your salad greens) tomato, cucumbers, red onion, celery, and crispy strings of onion. This is served with blue cheese dressing. This salad was huge and had tons of flavor with their buffalo sauce. Let me tell you this has some good heat to it but combined with all of the other ingredients, it is perfect. Spice from the sauce, crunchy from the crispy onion strings and greens and creamy with the blue cheese dressing! Excellent! Even Jim was stealing bites from my plate! I almost forgot, it also came with warm pita triangles and those were a nice addition!
Jim had the Signature Burger ($12.99) an Angus patty grilled, topped with bacon, melted smoked Gouda cheese, lettuce, tomato, red onion, ketchup, and mustard on a grilled brioche roll. Jim ordered his burger medium and it was absolutely cooked to perfection. This burger was so juicy…we are talking crazy juicy at every bite! Jim is the burger guy in the family and he loved this burger. Not only was the meat tender and juicy, the toppings were crisp and fresh. This is exactly what a burger should be! Jim also had the house made Cajun chips. He did like them but it was not his favorite. It seemed the seasoning was not really to his liking. Although I should mention they were eaten!
So let’s talk more about that menu! There is a lot to choose from. Some items on the menu are expected but some are not. Their appetizers have some great choices and not just the sausage rolls! How about soft baked pretzels? Or chicken wings with your choice of sauce including bourbon, buffalo, BBQ or Thai sauces! One of my favorite items I sometimes order out is coconut shrimp and they have those too. I have to mention their Stout Macho Nacho’s! Fresh tortilla chips with new castle chili, melted cheddar, tomatoes, red onions, lettuce, jalapeño’s and black olives served with sour cream and salsa. I don’t know about you, but that would be tasty on a cold fall or wintry night!
I told you about my salad but they have many other salads to choose from. Like Cobb, Tavern, Caesar and a Bourbon steak tip salad. They also have slider toppers, tiger shrimp, salmon, grilled or blackened chicken and steak tips to name a few! I also love that you pick your greens for the salad…romaine, field greens and spinach! I told you about Jim’s burger but there are so many more burgers to talk about! You can build your own burger, or maybe a grilled bourbon turkey burger with bacon, caramelized onion with a bourbon sauce is up your ally. If that is not enough to they also have a veggie burger along with numerous melts and sandwiches. Maybe a fish sandwich or a Reuben, or if you don’t want those, I bet the steak bomb would fill your belly!
Let’s talk pizza, well they have that too! I was very impressed with the pizza crust options not only do they have the traditional crust but they have a multi-grain crust as well as a gluten free crust. They have a full gluten free menu! Lots of great pizza options as you might guess, but I liked the looks of the Fenway pizza with their own sauce, peppers, onions and sausage!
The pies and pastries section is where you will find more of the traditional British food and they have a number of selections here too. Steak and ale pie and chicken and ale pie. If you want to combine the British flare with a typical thanksgiving dinner in a pasty, the New England Pasty with turkey breast, cornbread stuffing, cheddar mashed potatoes, all stuffed in a pastry crust served over mashed potatoes, seasonal vegetables and of course turkey gravy!
I gave you the run down on the food but they have a full bar service with a huge array of bottle beers and a significant number on tap! After all it is called British BEER company for a reason. If you are looking for a beer that is a little different, I think they can help you find something very tasty!

This cake was loved by all! Easy to make and packed with apples, walnuts and golden raisins. This lasted less than 24 hours in my house, everyone was going back for more. You can serve this with ice cream or have a bite in the morning with your coffee! There is no better time to make this cake while apple season is in full swing!
INGREDIENTS
3 cups flour
1 1/2 cups vegetable oil
2 cups sugar
3 eggs
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
3 cups peeled, cored and chopped apples. I used a combination of Granny Smith and MacIntosh
1 cup chopped walnuts
1 cup golden raisins
Optional
Vanilla ice cream for serving
DIRECTIONS
Preheat oven to 350 degrees. Grease a nine inch bundt pan with non-stick baking spray. Beat the oil and sugar together in a mixer with a paddle attachment. After it’s well mixed 4-5 minutes, add the eggs and beat until mixture is creamy. In a large bowl sift the 3 cups of flour with salt, cinnamon and baking soda. Stir into the batter a little at a time. Add vanilla, apples, walnuts and raisins and stir until combined. Transfer the batter into your prepared pan and bake for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan before turning out to a plate. Serve at room temperature with ice cream if desired!

This was a good, hearty and very filling dish. With the cooler weather making its way into New Hampshire, it’s time for a little bit of comfort food. This pasta dish filled with spinach and sausage is just right. Add a salad and your dinner is done. I also made this in the morning and put it in the fridge until we were almost ready to eat! You don’t see much of the spinach in this picture, but trust me it’s there, and delicious in this dish!
INGREDIENTS
1 package of jumbo shells (16 ounce)
4 cups ricotta cheese
12 ounce shredded mozzarella cheese
2 eggs, lightly beaten
4 teaspoons garlic powder
1 teaspoon dried oregano
3/4 cup grated Parmesan cheese
1 large jar of your favorite pasta sauce
4 cups chopped spinach
1 pound Italian sausage
DIRECTIONS
In a skillet over medium heat, brown and crumble the sausage and drain any excess fat and remove from the heat to a plate and set aside. In the same pan cook the spinach until wilted about 2 minutes. Cook the shells according to package directions.
In a mixing bowl combine the ricotta with 8 ounces of the mozzarella, 1/2 cup Parmesan, eggs, oregano and garlic powder. Stir in spinach. Coat the bottom of a 9 x 13 inch baking dish with the entire jar of the pasta sauce. Spoon the cheese mixture into the shells and place the shells open side up loosely together in the dish. There will be more shells than will fit in the pan so you can make a second smaller dish or freeze for a future use. Sprinkle the sausage over the top of the shells and top with the remaining 4 ounces of mozzarella and 1/4 cup of Parmesan. Cover with foil and bake for 25-30 minutes or until the cheese is bubbly. If you put in the fridge to bake later, the baking time will be closer to 40 minutes!
Serve warm.

This casserole was so easy and delicious. It has all the notes of a chicken pot pie, but in a pasta form. This is definitely going to be my “go to” this winter. Everyone in my family loved this and went back for seconds and that is a huge win! Serve with a salad and dinner is done!
INGREDIENTS
1 package of egg noodles
2 cups shredded chicken (I used a store bought cooked rotisserie chicken)
1 package frozen peas and carrots
1 package frozen corn
1 cup of milk
2 cans cream of chicken soup
1/2 medium onion diced
3 Tablespoons melted butter
1 sleeve of Ritz crackers, crushed
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
Pinch of salt
Pinch of pepper
DIRECTIONS
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick spray. Boil egg noodles according to package directions. While the noodles are cooking, in a large bowl mix the shredded chicken, frozen vegetables, both cans of cream of chicken soup, onion, basil, oregano, red pepper flakes, salt and pepper, mixing well. When the noodles are cooked, drain, and add to your other ingredients mixing until well combined. Pour into the prepared baking dish and top with the cracker crumbs and drizzle with the melted butter. Cover with foil and bake 30 minutes. Remove foil and continue to cook for 10 additional minutes.remove from oven and serve warm.
