So,  Jim (AKA Mr. MCYM), needed dinner for about 12 hungry fire fighters last week and he was really in the mood for pulled pork so that is what he got! I also made a side of coleslaw that can be eaten on the side or on TOP of the pulled pork sandwiches! The slow cooker came back empty… not a single drop to be found.  I think they liked it!

 

 

INGREDIENTS
1 3 1/2 pound pork shoulder or butt
1 container or Nantucket Off Shore Rasta Rub, or your favorite Cajun seasoning.
1 bottle Kraft Honey BBQ sauce

DIRECTIONS
Place pork in your slow cooker. Sprinkle 1 tablespoon of the Cajun seasoning over pork, add one cup of BBQ sauce spreading over the pork and cook on low for 8 hours. When the pork is cooked through shred the meat using two forks.  Add 1 more tablespoon of seasoning and more BBQ sauce, enough sauce to cover and mix in with all the meat.
Turn your slow cooker to the warm setting, if you have one, until you are ready to serve.

This is an easy and delicious weeknight dinner that comes together very quick. This makes an 8×8 dish and this was finished by three of us in one sitting! I will definitely be doubling the recipe next time as I think even the leftovers would be great!

 

 

 

INGREDIENTS
1 rotisserie chicken (you will need 1- 1 1/2 cups of chicken)
3 cups fried rice (leftovers, or from your favorite box)
1 small package of frozen steam fresh veggies of your choice.   My veggies had mini corn, broccoli and carrots.
1 bottle of  honey Teriyaki marinade and sauce ( I used Ken’s)

DIRECTIONS
Preheat oven to 350 degrees.
Cook fried rice according to package, if you are not using leftovers.
Mix 1 to 1 1/2 cups of chicken with 1/4 cup of Teriyaki marinade.
Steam vegetables. Mix all of the ingredients in a large bowl and add 1/4 cup more Teriyaki sauce.
Pour everything into a 8×8 prepared pan. Bake 350 Degrees oven for 10-15 minutes.
Take out of oven and drizzle a little more marinade over top!

I made this for lunch last week when the weather was cold and a bit rainy.

The curry in this gives the sandwich such a warm taste.

INGREDIENTS
1 1/2 cup chopped or shredded chicken
1/2 cup chopped, unsalted cashews
1/4 cup golden raisins
1/4 cup chopped Granny Smith apples
1/4 cup chopped red onion
1 Tablespoon curry powder
salt
pepper
Mayo (enough to moisten and bind)
I like to serve this on 7 grain bread!

 

DIRECTIONS
Mix all ingredients together except bread. Mix well and store in fridge.

I made these cake bars one night last week for my tech extraordinaire, Tim, as he was looking for something sweet!  Well not only did Tim love them but we did too!  Jim said they must be served with a scoop of ice cream and some warm chocolate syrup so… that is my serving suggestion to you!

 

 

INGREDIENTS
1 box of your favorite yellow cake mix
1/2 cup butter
1/2 cup brown sugar
2 eggs
1/4 cup water
1 teaspoon vanilla extract
1 bag mini chocolate chips

DIRECTIONS
Preheat oven to 350 degrees. Spray a 9×13 pan with non stick spray. Cream margarine and brown sugar together, beat in the eggs, cake mix, vanilla, and water, beating until just mixed. Stir in chocolate chips and spread in prepared pan. Bake for 25-30 minutes or until a tooth pick inserted comes out clean. Cool on a rack in pan.  Cut  into bars when cool.

imageThe Thirsty Moose Restaurant just opened in Dover N.H. so for all of my local readers you have a lot to look forward to with this new restaurant!  We  meaning (Jim, Robby and Robby’s girlfriend, Emily). Don’t worry the kids had plenty of time for their own date night! Went on Friday night. It was only the second day they were open and  they have not even had the official grand opening yet! We were greeted by a few adorable staff members, Katie and Sophia. The location is great and has large windows that open all way to have open air seating.  Lots of large screen televisions to view your favorite game. We arrived at about 4 p.m. and there were already plenty of people there!

Our server’s name was Steffi and she was just terrific welcoming us and not afraid to help us with our dinner choices and answering many menu item questions!  Steffi was also kind enough to give us a ton of great information about the Thirsty Moose! Did you know they make ALL of their sauces fresh in house?  YUP! They sure do!  Did you know they have a pizza oven? YUP! they do! They also make all of their own pizza dough!

Steffi also told us that they have something called the Antler Rack.  I bet you wonder what that is ? Well it is basically beer tasting. You can get up to six samples (Steffi says they are good size samples) of various different beers and you and the restaurant can even keep track of the beers you have tried and the ones you like! Pretty cool huh?

Speaking of all that beer they have 160 tap lines and 116 brews, that’s a lot of beer!

We ordered the Poutine fries ($5.99) to start and those were great .  We all enjoyed them…they are made with hand cut fries with fresh mozzarella cheese and a rich gravy. The cheese at the bottom got all nice and gooey… oh so good!image

 

 

 

 

 

 

Jim got the Hangover Burger ($10.99) and he really enjoyed that it was a burger with American cheese , egg and hollandaise sauce. The burger was cooked just right!

Emily had the Grown up Mac and Cheese ($12.99). This had broccoli, bacon and four cheeses! This was so creamy and so rich… not too mention a huge portion!

 

 

 

Robby had the California Club ($10.99).  This had turkey, applewood bacon, lettuce, avocado and buttermilk ranch dressing. This was good and a large portion,  but it was the least favorite for all of us.

I had the Thai chicken pizza ($13.99 for a small ).  This pizza was amazing if you like sweet with heat!  It packs a huge flavor punch. It has chicken , red onions, bell pepper, pineapple and a sweet and spicy Thai sauce. This has a thin delicious crispy, but not too crispy, crust.  I think a shrimp version of this would be an awesome special during the Summer months!                                                                                                             Just sayin……

Sadly, we could not try a dessert as they did not have any left as it was just a soft opening and they had ALREADY run out!  I think that speaks volumes of the kind of food you will be getting at this location, don’t you?!

The Thirsty Moose has a location in Portsmouth N.H. that is located on 21 Congress Street.  They do have a website as well.

We are already looking forward to going back!  Take some time out and enjoy Dover’s newest restaurant!
