Peppermint oil! I had no idea peppermint oil had so many great ways that it can be used. I am happy to share these with all of you! Most of you know the more common things like flavorings in food and beverages along with fragrance in soap and cosmetics. But did you know it also helps with indigestion? It DOES! Simply add a couple drops of peppermint oil into a warm glass of water and drink after your meal.
Are you suffering from a summer cough or cold? Guess what? The menthol in the peppermint oil is said to help the respiratory tract. Rub a small amount of oil on your chest OR inhale through a vaporizer.
Stress? Headache? SIMPLE FIX…dab a little peppermint oil on your wrist or put a couple drops in your bath water before bed!

Summertime, Summertime, Summertime! I just love garden fresh tomatoes don’t you? Fresh off the vine with a little sea salt or in this recipe with reduced balsamic dressing. No matter how you like your tomatoes, nothing is better than just off the vine! This recipe is super simple and is a terrific side dish for any summertime lunch or dinner!
INGREDIENTS
2 red tomatoes, sliced into wedges
3 yellow tomatoes, sliced into wedges
3 orange tomatoes, sliced into wedges
(any assortment of tomatoes you like is fine)
Sea salt
Pepper
3 Tablespoons of Balsamic vinegar
2 teaspoons brown sugar
2 Tablespoons olive oil
Fresh basil leaves
DIRECTIONS
Slice tomatoes into wedges and season with sea salt and pepper to taste. set aside.
Cook the balsamic vinegar and brown sugar together in a small saucepan over medium heat until mixture is reduced by half. This just takes a couple minutes. Remove from the heat whisk in olive oil and drizzle over the tomatoes sprinkle with basil leaves and serve immediately.

This post is dedicated to my beautiful niece, Sarah. Sarah is a 21 year old student athlete. Oh and I should say also a vegetarian! Sarah is a fantastic runner and an all around great athlete and she is the one that introduced me to PB2! She uses this in almost everything, it is a great way to add protein without all the fat! On most mornings I get up and go for a walk, BUT I don’t like to eat much before I go. Sometimes you just need a little something to get moving and these peanut butter energy bites are just the thing. These are also great for a post workout as well. These are easily adaptable to ANY fruit, nut or grain you like!
INGREDIENTS
6 Tablespoons PB2 (prepared with 3-4 Tablespoons of water)
2/3 cup dry oatmeal (I used old-fashioned oats)
1/3 cup mini chocolate chips
1/3 cup ground flax seed
1/3 cup coconut flakes
1/4 cup honey
1 tsp. vanilla
DIRECTIONS
in a medium bowl, mix PB2 with water blending well. Add the remaining ingredients to the bowl mixing thoroughly. Chill in the refrigerator for at least 30 minutes. Once chilled roll the balls about 1 inch in diameter. I found that I had to squeeze the mixture a little bit in my hand and then roll into a ball. Store in an airtight container in the refrigerator.

I have been on a sweet tea kick all summer! There is nothing better than a perfect sweet summer tea, BUT I have been buying all of the tea and not making it, so the search was on for the perfect recipe. I found this recipe over at www.wickednoodle.com Simple to prepare and simply delicious! You can make this with any flavor tea you like. I also like to add frozen fruit to my tea to keep it cold and add to the flavor of the tea!!
INGREDIENTS
6 raspberry tea bags
16 cups water divided
1 1/2 cup sugar
a pinch of baking soda*
DIRECTIONS
Bring 4 cups of water to a boil Add your tea bags, turn heat off and let steep for 15 minutes. Remove tea bags and stir in sugar until completely dissolved. Add a small pinch of baking soda and stir. Add tea mixture to remaining 12 cups of water, mixing well. Chill in refrigerator.
Notes: This makes 16 cups You can easily cut this recipe in half. Add frozen fruit to help keep cold instead of ice cubes.
*The baking soda takes the bitterness out of the tea!
Well, I am not sure where to begin with this review it is full of good and not so good! I really, really desperately wanted to bring all positive reviews for this restaurant. I really like what they are doing by supporting local farms and fundraising for various groups. Also, I love the idea of a chefs whim menu or dessert item. Growing up in Dover I also really love that they have included so much Dover history in the restaurant. For anyone that is not familiar with this restaurant it is located in Dover N.H. directly across from the Children’s Museum in Henry Law Park. Address is 47 Washington Street.
So, we have been into the restaurant a couple times with some things that we really like and things well…not so much! The particular evening we went was on a Saturday night at 5 pm. There were a handful of patrons already enjoying food and beverages. Speaking of beverages this is a brew pub, they make their own beer and even give tours. They also sell many other local craft beers and have full bar service. We sat at the bar this particular evening. The two bartenders were very nice and did their very best to accommodate us! So first up were the drinks. Mr. MCYM had a diet coke, that was easy. I asked for a light beer. Our bartender came over with three small taste’s of three different beers. Jim and I both tried all three and both liked the white Alagash the best so that is what I had….so far so good!
Next was dinner. Mr. MCYM was pretty easy with his choice he ordered their settlement burger. I was really in the mood for fish something not fried. My eyes went directly to the Lobster Beignets! I was so excited to give this a try! We placed the order only to have our server come back and tell us they are out of the Lobster Beignets…..oh NO! say it’s not true…ugh, okay…so I had to pick myself up and move on…so a cup of fish chowder was going to have to do. I was okay with that and had made a full recovery not having the Lobster dish! Things were back on track, well , for the moment! Just a short time later our dinner arrived, all looks good! Mr. MCYM confirmed his burger was very good and cooked well. Yes SCORE!
I took a spoonful of my fish chowder and oh, no! No, this can’t happen…it was COLD! Ugh, so disappointed. I stirred the chowder just hoping, praying, pleading that it was nice and warm, it just was not so. I tried the homemade cracker it came with that was good. Much different from your typical soup cracker you would buy at the store. This cracker was more dense with good flavor. This girl could not live on two small crackers for dinner though. I sent the chowder back and ate the best french fries ever off of Jim’s plate! These fries and homemade ketchup were positively delicious! Crispy on the outside tender inside and the homemade ketchup was sweet from tomato flavor… not from the sugary stuff you buy at the store!
So all in all, it was not a total disaster, but pretty close! Running out of food with a limited menu is not good, serving cold food again disappointing. The shining star were the crispy french fries! I hope you have better luck that we did!
