I love dinners that come together quickly with little clean up! True paella takes not only a lot of time but typically a lot of ingredients as well. This dish has some of the same components and is much easier to make! This dish will also serve 6 hearty portions!

INGREDIENTS
1 pound of Italian sausage, casing removed
2 Tablespoons olive oil
1 Vidalia onion, chopped
2 cloves of garlic, chopped
1 pinch of saffron threads
1 bay leaf
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
2 cups uncooked short grain white rice
1 quart chicken stock
1 cup or more of frozen peas

DIRECTIONS
Brown sausage in a large skillet over medium high heat breaking the sausage up into bits as it cooks. When cooked through, remove sausage to a plate and set aside. Heat the 2 tablespoons of oil in the same skillet,  sauté onion and garlic. Add red pepper flakes and rice. Cook stirring rice until coated with oil, about 2-3 minutes. Stir in saffron, bay leaf, Italian seasoning and chicken stock. Bring to a boil, cover and reduce heat to medium low. Simmer 20 minutes. Add peas and put the sausage back in the pan and heat through.
Serve warm.

A few weeks ago I was on the hunt for a simple and healthy cookie.  Well the recipe I tried was awful and ended up in the trash, but not this one! This is so simple and so easy with all of the ingredients I have on hand!! This made 18 cookies and came together in just minutes! Did I mention only four ingredients! The taste was very good.  I will be making these again very soon!

 

INGREDIENTS
2 very ripe bananas
1 huge spoonful of peanut butter ( I used Jiff all natural creamy)
1 heaping cup of oats
Dark chocolate mini chips (I used less than a half a cup)

DIRECTIONS
Preheat oven to 350 degrees.  Mix banana’s , peanut butter and oats together until well combined and banana is mashed through. Add the chocolate chips mixing them throughout.  Spoon by small tablespoon onto a baking sheet sprayed with non stick baking spray and bake for 10 minutes. The bottom of the cookies will be slightly browned.
remove from oven and cool on a baking rack.

imageLast weekend we spent some times in Portsmouth N.H. walking, shopping and then off to enjoy one of our favorite restaurants, the Flat Bread Pizza Company. The Flat Bread company started in Amesbury MA. in 1998. They are all organic and source most of their ingredients from local farms. They now have 11 restaurants with most of them being in the New England area and one in Hawaii. While we were there, we had a funny conversation with our waiter.  He asked us what we wanted to drink and my husband asked him if they had diet Coke thinking there is no way this organic place is going to have diet Coke! Well guess what,  the waiter laughed and said well, yes we do!  He said that is the one and only thing that is NOT organic in the restaurant as the owner loves his diet Coke and was not giving it up!  Needless to say Jim was pleasantly surprised.
This was kind of a strange day for Jim and I as it was our son, Robby’s 18th birthday, and he was celebrating his birthday with his uncle Barry and aunt Sydney SKYDIVING! He traveled completely across the country on his own to jump out of a plane at Skydive Elsinore  in Southern California with his uncle! Crazy if you ask me, but if you look at the pictures you can see he really enjoyed his time! So Jim and I spent the day shopping and celebrating without him and we even got dessert which we never do!

imageOn to the food! One of our favorite pizza’s is the taco flat bread pizza as it is delicious! All of your favorite Mexican flavors in a pizza! This is made with all natural beef from Neiman Ranch with homemade organic taco seasoning, organic red onion, cilantro, tomatoes, crushed tortilla chips, whole milk mozzarella, imported Parmesan cheese and their own garlic oil and blend of organic herbs. IT is then finished off with shredded lettuce and sour cream! Absolutely delicious!

We also ordered another flat bread pizza that was a special that day. It was a sweeter pizza with organic Granny Smith apples, a maple glaze with thick cut crispy bacon and of course lots of cheese! This too was very good! But wait there is more ! We also had the brownie sundae! IT was Robby’s birthday after all!  The brownie sundae was so good. The brownie gets heated in the wood burning oven and topped with two scoops of ice cream, chocolate sauce, fresh whipped cream and a sprinkle of powdered sugar! This was warm, so chocolately and gooey, gooey goodness!

Spring has finally arrived and my grill is in full motion grilling up all of our favorite summer dishes! This recipe is no exception..easy and delicious!  Not really sure why this is called Hawaiian chicken, but I found it on Pinterest and we have really enjoyed this dish! One of the best things is you most likely have all of the ingredients in your pantry already. You could easily bake this is well.

INGREDIENTS
1/2 cup packed brown sugar
1/4 cup ketchup
1/4 cup reduced sodium soy sauce
2 Tablespoons chicken broth or cooking sherry
1 teaspoons minced garlic
6 chicken breasts or chicken thighs.  These can be bone in, skin on or boneless, skinless. I used boneless skinless breasts.

DIRECTIONS
In a small bowl mix all of the ingredients, except the chicken. Mix well and pour into a resealable bag and add the chicken and refrigerate.  I like to do this the night before I am grilling it but you can do it the morning of as well.
Drain the marinade from the chicken. Preheat your grill to medium heat. Grill chicken for 6-8 minutes per side depending on the size of the chicken. When completely cooked through remove from grill and serve warm.

imageChocolate Beer Bread! Move over banana bread, there is a new bread in town and it is here to stay!! This is so good, lots of chocolate flavor and chocolate chips and  no one could ever guess it is made with beer! Crazy right? Well this recipe comes from my dear friend, Kathy, who is also someone who enjoys cooking and baking really good food! I work with Kathy at the high school and when we have a few moments together we find ourselves talking about our latest and greatest recipes. Kathy is a french teacher who loves to teach, travel, cook and spend time with good friends and family, I hope you enjoy Kathy’s recipe as much as I do!

INGREDIENTS
2 cups all purpose flour
1/2 teaspoon salt
2/3 cup cocoa powder
1 cup white sugar
1 Tablespoon baking powder
1 Tablespoon corn starch
3/4 cup chocolate chips
10 ounces chocolate beer  (I used Decadent dark chocolate ale, but if you cannot find chocolate beer you can also use stout, but this will change the taste of the bread)
2 Tablespoons vegetable oil
2 Tablespoons melted butter

DIRECTIONS
Preheat oven to 350 degrees. Add flour, salt,cocoa powder, sugar, baking powder, cornstarch and chocolate chips in a large bowl and stir to combine. Add the beer and melted butter and stir until combined.   This will be a thick batter. Pour into a loaf pan that has been sprayed with non-stick baking spray. Bake for 45 minutes or until a tooth pick inserted in the center comes out clean. Cool before slicing.

Recipe Note- after tasting this amazing chocolate beer I have decided this would be a great beverage to make a root beer float! Swap the root beer for the chocolate beer! Yup!! Just might have to try that!!
