I’m always looking for a quick simple side dish and this one was just that, not to mention really good. But you know me I love any roasted vegetables and this is no different. I ate this as a side dish but Jim and a friend of ours had this on top of my grilled Southwest Burgers and they loved it that way. You can have this any way you want and I know you will like the fresh flavor as much as we did!!
INGREDIENTS
1 pound cherry tomatoes, halved
2 garlic cloves, minced
1 Tablespoon extra virgin olive oil
1/2 cup Panko crumbs
2 Tablespoons melted butter
2 Tablespoons fresh basil, chopped
DIRECTIONS
Preheat the broiler leaving the oven door open slightly. Combine the tomatoes, garlic and olive oil in an 8 inch baking dish. Season with salt and pepper. Broil stirring occasionally until the tomatoes are softened…about ten minutes. Combine the panko and melted butter, sprinkle over the tomatoes and broil for an additional minute, add basil to the top and serve warm.
