Jim and Scot recently flew into Rockland, Maine while working and lucky for me they went to lunch at Claws Restaurant and they were kind enough to bring me home some Award winning lobster bisque.
Claws is located at 743 Main Street in Rockland , Maine. They are open 7 days a week from 11 am to 9 pm. They have a deck overlooking the water making the perfect place for lunch!

If you follow my blog you can most likely guess what Jim ordered at this quintessential seafood shack, you got it the fried haddock sandwich. ($15.00). The perfectly fried sandwich comes with lettuce, tomato, red onion on a buttered and toasted brioche bun. French fries on the side along with a side of home made tarter sauce. Jim really enjoyed his sandwich and cleaned his plate!

Scot had the lobster taco’s, ($22.00) the lobster taco’s are butter poached taco’s with crispy zesty slaw and cilantro lime cream served with crispy tortilla chips, house made blueberry pico de gallo and not to be forgotten a blueberry biscuit. I have it on good authority that Scot enjoyed his lunch as much as Jim did.

Before they left they ordered a cup of gluten free lobster bisque ($8.00) to bring home to me. (They were able to get some ice at the airport so it could make it home safe) Claws lobster bisque and clam chowder are both gluten free along with many other things on the menu but they are also award winning as they have been voted the best of Knox county in 2018, 2019, 2020 and 2021. That’s very impressive as we know Rockland Maine has been named the Lobster capital of the world. The bisque was very good, it was rich and creamy just as you would expect but something I did not expect was the amount of herbs and seasonings in it. This bisque did not disappoint. Lots of lobster flavor, lobster pieces and herbs. I can understand why it’s award winning.

These muffins were not only easy to make but delicious! Taste of Home recipes never disappoint! I made one very small change by using pecans instead of walnuts. Not only did we enjoy these but I shared some with my neighbors and they were just as happy with them as I was! I will make these muffins again soon. I used a mini muffin tin but full size works just fine just adjust the oven time.

INGREDIENTS

1/2 cup of butter, softened
1/2 cup of sugar
1/2 cup packed brown sugar
2 large eggs
1 1/2 cups mashed banana’s, about 3 large
3 teaspoons vanilla extract
2 cups all purpose flour
3 teaspoons baking soda
1 cup chopped walnuts or pecan
1 cup semi sweet chocolate chips.

DIRECTIONS

Pre heat oven to 350 degrees. Cream butter and sugars. Beat in eggs, banana’s and vanilla. In another bowl combine flour and baking soda, add to creamed mixture and mix until just combined. Stir in walnuts and chocolate chips. Fill greased muffin cups 2/3 full.

Bake until a toothpick comes out clean, 20-25 minutes. Cool for five minutes before removing muffins to a wire rack.

We have been doing a lot of cooking over our fire pit as it has an adjustable cooking grate. We have made pizza’s, chicken and these Brussel sprouts to just name a few things. The cooking time may differ depending on how hot your fire is. These can also be roasted in the oven!

INGREDIENTS

1 pound of Brussel sprouts, cleaned and halved
2 Tablespoons of vegetable oil
Pinch of salt
Pinch of pepper
Reduced balsamic vinegar, I buy the already reduced vinegar in the small bottles but you can easily reduce your own.

DIRECTIONS

Light the coals in the fire pit about 25-30 minutes before cooking.
Place the cleaned and halved Brussel sprouts in a cast iron pan. Drizzle with oil and sprinkle with salt and pepper. Mix to combine.
Add the pan to the grate on the fire pit and roast, stirring occasionally for 25-30 minutes or until desired doneness. Just before taking off the fire drizzle with reduced balsamic vinegar.
Serve warm.
