I am always looking for new chicken recipes as we eat chicken more often than not. It is hard to find something new, different and really good! Well this recipe from plain chicken hit all the marks! I will be making this again… for sure!
4 boneless chicken breasts
3 Tablespoons butter
2 HEAPING Tablespoons orange marmalade
1 Tablespoon Dijon mustard
3/4 cup chopped toasted pecans
1 1/2 cups whipping cream
To toast pecans place them in a dry skillet over medium heat, stir and keep a close eye as they will can can burn quickly! I know they are done when you can smell them!
Pound chicken thin, (I like to do this using a large Ziploc bag. I place the chicken in, close the bag not zipping it and pound the chicken to desired thickness.) Season with salt and pepper.
In a large skillet, melt butter. Cook chicken over medium high heat for 3-4 minutes per side. Remove chicken from skillet. Reduce heat to medium, add whipping cream, marmalade, mustard and stir well. Add chicken, sprinkle with pecans and cook 8-10 minutes or until chicken is cooked through and the sauce is thickened.
I served this with mashed potatoes and I am glad I did! The sauce was soooo delicious and when it mixed with the potatoes it was just devine, oh so good!
