The strawberries this week were not only on sale, but they were gorgeous and a beautiful red color. With spring in the air , despite the rain. I was really excited to make something that just screams spring and this was it. Our Amanda was home for the weekend, so what a better way to end a girls weekend than with a pretty girly lunch! This would be great for not only a girls lunch but also great for a wedding or baby shower!
4 oz. package cream cheese (softened)
1/2 cup peeled, seeded and finely chopped cucumber
1/3 cup mayonnaise
1/4 cup minced red onion
3 Tablespoons fresh basil
salt and pepper
sandwich bread (I used Pepperidge Farm THIN BREAD, it worked perfectly for this recipe)
Stir together softened cream cheese, mayonnaise, cucumber, red onion, basil and season with salt and pepper. Slice your strawberries. Spread cream cheese mixture on one side of a slice of bread. Add four sliced berries, place the second slice of bread on top and trip the edges of the bread and slice diagonally. You can also trim the bread before making.
This makes approximately 8-10 sandwiches.
