Roasted Veggie and Balsamic Pizza



YUP! you read that right, roasted vegetables on a pizza with a reduced balsamic glaze.  This recipe was very good.  ALTHOUGH it did come with some criticism from my husband and I knew it would. This has ricotta cheese in it and that is one of very few things Jim does not like. With that being said I think it would be great using an Alfredo sauce type base instead of the ricotta  So next time that is what I will do! Feel free to change up this pizza with your favorite roasted veggies. You can add mushrooms, squash ANYTHING, make this one yours!

I will say the balsamic glaze really makes the pizza, it adds a sweet flavor to all of the roasted veggies.


Pizza dough of your choice (make your own, store bought or one from your local pizza place.
2 slices bacon (optional), cooked and diced
1/4 cup diced red onion
3 garlic cloves, chopped
1 tablespoon fresh rosemary
1 bunch of asparagus, trimmed and cut in bite sized pieces
Parmesan cheese
Gruyere cheese
Olive oil
4 oz cream cheese
1/2 cup ricotta cheese
Balsamic vinegar

Put oven on broil (keeping oven door open slightly)
Add all of your chopped veggies to a baking sheet drizzled with olive oil, salt, and pepper. Roast in the oven (on broil with the door open slightly) until the veggies are slightly browned and tender. I added the garlic about three minutes before I took the veggies out of the oven.  As soon as you take the veggies out of the oven, add the rosemary right into the pan and mix. The roasting process takes about ten minutes but this will depend on the size and type of the vegetables you are using…so adjust as needed.

Change the oven temperature to 375 degrees. Depending on your pizza dough, spread the dough onto a pizza stone or baking sheet. I partially cooked my dough for about eight minutes in a 375 degree oven. Remove from oven.

For the balsamic drizzle, place one cup of balsamic vinegar in a small saucepan and reduce to half or until it can coat the back of a spoon. Mix the ricotta cheese and the cream cheese in a bowl. Add salt and pepper.

To assemble pizza spread the ricotta mixture over the partially baked crust, then add your roasted vegetables and bacon, if you are using.Then the parmesan and gruyere cheese. Place the pizza back in the oven for about 15- 20 minutes. You want the crust to finish baking and melt the cheese on top.

When it comes out of the oven, drizzle with the reduced balsamic.
